One Pot Dinner: Roasted Pork with Apples & Rutabaga

Now I know what you are thinking…rutabaga…what in the world is a rutabaga??? Don't let the name scare you off trying the Roasted Pork with Apples & Rutabaga!

Quick rutabaga history. Rutabaga is a cruciferous vegetable that is known in other parts of the world as “swede” but in North America is known as a rutabaga. A root vegetable, the rutabaga is a cross between cabbage and turnips. It's most common to prepare the meat (bulb) of the rutabaga like you would potatoes – mashed or roasted. However, the leaves can also be prepared much like other leafy vegetables, such as spinach or chard.

In my one-pot Roasted Pork with Apples & Rutabaga, the rutabaga acts like a potato but without the associated starches. Rutabaga and apples both have high fiber contents to keep you satiated and are full of vitamins and minerals to help boost your antioxidants.

This dish is super simple to prepare, has a small ingredients list, and, yes, only requires one pot! Talk about a time-saver come clean up time.

Roasted Pork with Apples & Rutabaga

Ingredients
  • 1 large rutabaga (OR sub radishes or potatoes)
  • 2 medium apples (like gala or granny smith)
  • 1 lemon
  • 3T grass-fed butter (OR sub olive oil)
  • 1 pound boneless pork chops (~3/4# thick)
  • 2T apple cider vinegar
  • 1/2 tsp dried rosemary
  • S&P

  • 1 lemon
  • 3T grass-fed butter (OR sub olive oil)
  • 1 pound boneless pork chops (~3/4# thick)
  • 2T apple cider vinegar
  • 1/2 tsp dried rosemary
  • S&P
Roasted Pork with Apples & Rutabaga
Instructions
  1. Preheat oven to 375 F
  2. Peel rutabaga and then cut rutabaga into 1” cubes & 2 apples into 1” slices.
  3. Sprinkle rutabaga and apples with lemon juice so they do not oxidize.
  4. In an oven safe skillet or Dutch oven, melt 3T butter or olive oil over high heat.
  5. Season pork chops with S&P and cook for 1-2 mins/ side.
  6. Add 2T apple cider vinegar to pan & place cubed rutabaga on top of pork. Season w/ S&P.
  7. Top w/ sliced apples & ½tsp rosemary.
  8. Cook covered for 30 mins. Remove cover and cook for an additional 15 mins.
