“Do you long for nutritious, wholesome dinners…something different…to be ready within minutes of getting home from work? Me, too! Well, stop dreaming…now you can.

Last week I tested out a menu from Prepdish.com – you might want to check it out too! They provide you with a shopping list for a week's worth of menus (nothing new here) AND (this is the exciting part!) instructions on how to spend just a few hours prepping everything in one afternoon. That way, when you come home from work, you can pop a few things in the oven, and voila…you have a fabulous meal. It's not like “leftovers” because the meal is just prepped, not prepared.

This meal (above) consisted of Sundried Tomato & Spinach Stuffed Chicken w/ Roasted Sweet Potatoes and a Roasted Beet & Fennel Salad. OMG…this meal was fabulous! I didn't even think I liked fennel and I'm not usually keen on beets…but I ate it everyday like it was dessert!!
Because everything was prepped, “making dinner” consisted of putting the pan of chicken in the oven, waiting a few minutes, then adding the chopped up and seasoned sweet potatoes. And, during the 30 or so minutes it took to cook, I spent two minutes putting together the four ingredient salad (all the pieces were already chopped). Mmmm.

I chose the gluten-free, dairy-free menu (January Menu) because even though I'm not gluten-free I already have plenty of pasta dishes and eat plenty of bread…and I was looking for more variety and more interesting ways to prepare vegetables.”

Thanks Dr. Jo for reviewing the December plan! So glad to hear you enjoyed the food and that you are loving beets and fennel.
