Last week I tested out a menu from – you might want to check it out too! They provide you with a shopping list for a week's worth of menus (nothing new here) AND (this is the exciting part!) instructions on how to spend just a few hours prepping everything in one afternoon. That way, when you come home from work, you can pop a few things in the oven, and voila…you have a fabulous meal. It's not like “leftovers” because the meal is just prepped, not prepared.

This meal (above) consisted of Sundried Tomato & Spinach Stuffed Chicken w/ Roasted Sweet Potatoes and a Roasted Beet & Fennel Salad. OMG…this meal was fabulous! I didn't even think I liked fennel and I'm not usually keen on beets…but I ate it everyday like it was dessert!!
Because everything was prepped, “making dinner” consisted of putting the pan of chicken in the oven, waiting a few minutes, then adding the chopped up and seasoned sweet potatoes. And, during the 30 or so minutes it took to cook, I spent two minutes putting together the four ingredient salad (all the pieces were already chopped). Mmmm.

I chose the gluten-free, dairy-free menu (January Menu) because even though I'm not gluten-free I already have plenty of pasta dishes and eat plenty of bread…and I was looking for more variety and more interesting ways to prepare vegetables.”
