Pomegranate Cocktail with Rosemary

Ingredients

  • 1/2 cup honey
  • 3 fresh rosemary sprigs (optional, more for garnish)
  • 2 cups pomegranate juice*
  • 1/2 cup gluten-free vodka
  • 4 cups soda water (or champagne)

Instructions

  • Place 1⁄2 c honey + 1⁄2 c water + 3 whole sprigs of fresh rosemary in a small saucepan on stove top over medium heat.
  • Allow mixture to just begin to bubble, turn to low and cook 1-2 minutes, stirring occasionally. Set aside to cool.
  • In a large pitcher, place: 2 c ice cubes + 2 c pomegranate juice + 1⁄2 c vodka + 4 c soda water.
  • Remove rosemary sprigs from simple syrup and add simple syrup to the pitcher. Stir to combine. Option to serve with a rosemary garnish.
