In a large bowl, whisk together 5 eggs, 1/2 cup honey and 1/2 cup coconut oil (melted).
Stir in 3/4 cup coconut flour, 1/2 tsp salt and 1/2 tsp baking soda.
Fold in 1T poppy seeds and zest of 1 lemon.
Lightly oil a muffin tin or use muffin liners. Fill muffin cups until 4/5 full. Bake at 350° for 20-25 minutes. Cool completely.
