Gluten Free Lemon Poppyseed Muffins

Ingredients

  • 5 eggs
  • 1/2 cup honey
  • 1/2 cup coconut oil (melted)
  • 3/4 cup coconut flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 T poppyseeds
  • zest of 1 lemon

Instructions

  • In a large bowl, whisk together 5 eggs, 1/2 cup honey and 1/2 cup coconut oil (melted).
  • Stir in 3/4 cup coconut flour, 1/2 tsp salt and 1/2 tsp baking soda.
  • Fold in 1T poppy seeds and zest of 1 lemon.
  • Lightly oil a muffin tin or use muffin liners. Fill muffin cups until 4/5 full. Bake at 350° for 20-25 minutes. Cool completely.
