Grilled Thick Pork Chops w/ Summer Slaw

Ingredients

For the Grilled Pork Chops:

  • 4 thick cut pork chops
  • salt & pepper

For the Summer Slaw:

  • 3 T olive oil
  • 1 T apple cider vinegar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 lemon
  • 2 peaches
  • 12 oz shredded slaw mix

Instructions

For the Grilled Pork Chops:

  • Preheat grill to medium high heat. Generously sprinkle pork chops w/ S&P.
  • Cook pork chops directly on grill for ~3-5 mins per side or until cooked through, 145 F.

For the Summer Slaw:

  • For slaw dressing, in a medium container, combine: 3T olive oil, 1T apple cider vinegar, 1/2tsp salt, 1/4tsp pepper & juice of 1 lemon.
  • Cut peaches into bite-sized pieces.
  • Toss peaches w/ cabbage and slaw dressing. Salt to taste. Serve on the side
