Guacamole Stuffed Mini Peppers

Ingredients

  • 4 mini bell peppers
  • 2 avocados
  • 2 Tbsp finely diced red onion
  • 1 lime
  • salt to taste

Instructions

  • Wash peppers and cut in half, removing stem and membrane.
  • Mash 2 avocados with a fork or potato masher.
  • Mix together 2 Tbsp diced red onion, mashed avocado, juice of 1 lime, and salt to taste.
  • Stuff guac into mini pepper halves and serve.
