Mocha Chocolate Mousse

Ingredients

  • 5 oz dark chocolate*
  • 1 can full fat coconut milk* (refrigerated overnight)
  • 1/4 cup maple syrup*
  • 2 T ground coffee (6 oz brewed coffee)
  • 1 tsp vanilla extract

Instructions

  • Use 2 T ground coffee to brew a 6 oz cup of coffee and let cool.
  • Melt 5 oz dark chocolate in a double boiler or in the microwave. 
  • Add melted chocolate, solid part of coconut milk (discard or save liquid), 1/4 c maple syrup, 6 oz brewed coffee and 1 tsp vanilla to a blender. Blend on high until creamy. 
  • Pour into container and place in the refrigerator until it becomes solid.
