Carrot & Snow Pea Stir Fry w/ Peanuts & Brown Rice

Ingredients

  • 1/2 Tbsp olive oil
  • 4 carrots
  • 2 cups snow peas
  • 1/2 cup roasted peanuts
  • 1 1/2 cups brown rice

Instructions

  • Cut 4 carrots into bite-size pieces.
  • Add ½ Tbsp olive oil to a sauté pan over medium-high heat, then add carrots and snow peas.
  • Sauté for 10 minutes.
  • Add Stir Fry Sauce and cook another 2-3 minutes. 
  • Top with ½ cup roasted peanuts. Serve over Brown Rice.
  • Add 3 cups water and 1 ½ cups brown rice to a medium pot and bring to a boil. Reduce to simmer and cover. Cook for ~1 hour.
