Shrimp & Asparagus Cauliflower Risotto

Ingredients

  • 3 cloves garlic
  • 1 bunch asparagus
  • 1 shallot
  • 12 oz frozen cauliflower rice
  • 1 # deveined & peeled shrimp
  • 4 T grass fed butter
  • 1/2 cup heavy cream
  • 1 cup grated parmesan
  • 1 tsp Old Bay seasoning
  • 1/4 tsp salt

Instructions

  • Cut & discard woody ends off 1 bunch asparagus. Chop asparagus.
  • Mince 3 cloves garlic
  • Chop 1 shallot.
  • Heat 4T butter over med-low heat in a large sauté pan.
  • Cook 1# shrimp ~1-2 mins per side until cooked through. Once cooked, remove to a plate.
  • Add 1 chopped shallot + 3 minced garlic cloves + chopped asparagus to pan and cook ~3-5 mins.
  • Stir in 12oz frozen cauli rice, 1/2c heavy cream, 1c parmesan, 1/4tsp salt & 1tsp Old Bay seasoning. Cook for 1-2 mins, stirring.
