Chop 1 zucchini, small yellow onion, and 1 red bell pepper.
Mince 2 garlic cloves.
In a large pot, heat 1 Tbsp olive oil over medium heat. Add 1 chopped onion and 2 cloves minced garlic.
Once onions are soft add the following:- 1 chopped red bell pepper- 1 chopped zucchini- 2 cans drained and rinsed black beans- 1 1⁄2 tsp garlic powder- 1 1⁄2 tsp cumin- 1 1⁄2 tsp chili powder- 1 tsp smoked paprika- 1⁄2 tsp salt- 1⁄2 tsp oregano- 10 oz can tomatoes w/ green chiles- 8 oz tomato sauce- 1⁄2 cup water Bring mixture to a boil, lower heat, cover and simmer for ~20mins. Add up to 1⁄2c more water as needed for consistency (should be thick like chili).
Cook gluten free noodles according to package directions.
Mix pasta into chili mac or serve chili mac over pasta.
Option to sprinkle 1⁄4c shredded cheddar over each serving.
