Curry Spiced Almonds

- 1 tsp curry powder
- 1/4 tsp cayenne
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 1/2 cups almonds
- 2 tsp olive oil
Preheat oven to 300 F. Line a baking sheet with parchment paper. In med bowl, stir together 2tsp curry powder + ¼tsp cayenne + ½tsp salt + ¼tsp pepper. In a separate bowl add the almonds + 2tsp olive oil, toss until coated. Add the spice mix and stir until the nuts are well coated. Spread evenly on the baking sheet. Bake, stirring once, until fragrant and toasted, about 25 minutes. Let cool completely. Store nuts in a jar or sealed bag at room temperature.
