Add 1 cup rice + 2 cups water to a medium pot. Bring to a boil, cover and turn heat to low. Simmer ~20 mins until liquid is absorbed.
Chop 1 red bell pepper. Chop 1 shallot. Mince 3 cloves garlic.
Heat a large saute pan over medium heat. Add ground lamb, ½tsp salt & ¼tsp pepper.
Cook, breaking up meat, until cooked through. Remove meat to small serving dish.
Heat 1T olive oil in a large, deep saute pan over medium heat.
Add chopped red pepper + shallot + minced garlic. Cook, stirring ~4 min.
Add 15oz coconut milk, 2T soy sauce, 2T honey & 1 cup peas.
Stir in 1T curry powder, ¼tsp salt & ¼tsp red pepper flakes & simmer ~8 mins.
Add 5oz spinach to coconut mixture & stir until wilted.
Build bowls: rice + ground lamb + coconut/spinach mixture. Salt to taste.
