Ground Lamb Curry Bowls

Ingredients

  • 1 shallot
  • 3 cloves garlic
  • 1 red bell pepper
  • 5 oz spinach
  • 1 1/2 # ground lamb
  • 8 oz frozen peas
  • 1 cup rice
  • 15 oz light coconut milk
  • 2 T soy sauce (or sub tamari or coconut aminos)
  • 2 T honey
  • 1 T curry powder
  • 1/4 tsp red pepper flakes
  • S&P

Instructions

  • Add 1 cup rice + 2 cups water to a medium pot. Bring to a boil, cover and turn heat to low. Simmer ~20 mins until liquid is absorbed.
  • Chop 1 red bell pepper. Chop 1 shallot. Mince 3 cloves garlic.
  • Heat a large saute pan over medium heat. Add ground lamb, ½tsp salt & ¼tsp pepper.
  • Cook, breaking up meat, until cooked through. Remove meat to small serving dish.
  • Heat 1T olive oil in a large, deep saute pan over medium heat.
  • Add chopped red pepper + shallot + minced garlic. Cook, stirring ~4 min.
  • Add 15oz coconut milk, 2T soy sauce, 2T honey & 1 cup peas.
  • Stir in 1T curry powder, ¼tsp salt & ¼tsp red pepper flakes & simmer ~8 mins.
  • Add 5oz spinach to coconut mixture & stir until wilted.
  • Build bowls: rice + ground lamb + coconut/spinach mixture. Salt to taste.
