Preheat oven to 375 F.
Pierce 4 sweet potatoes w/ knife. Bake ~45-60 mins or until knife slices through easily.
Chop ½ red onion. Set aside ~2T for guac.
Mince 2 garlic cloves.
Chop ½ bunch cilantro.
For guac, mix together cilantro, flesh from 2 avocados, 2T chopped red onion, salt to taste & juice of 1 lime.
Heat 1 T olive oil over med low heat. Add remainder of the chopped red onions & cook ~3-4 mins. Add 2 minced garlic cloves & cook an additional minute.
Add 15oz drained & rinsed black beans, 1tsp cumin, 1/2tsp coriander & 1/4tsp salt to the pan. Cook, stirring, ~4 mins.
Build sweet potatoes w/ black beans + guac.
