Sheet Pan Garlic Soy Chicken Thighs w/ Veggies

Ingredients

  • 3 cloves garlic
  • 3 carrots
  • 8 oz shiitake mushrooms
  • 1 bunch baby bok choy
  • 1 # boneless, skinless chicken thighs
  • 1 T sesame oil
  • 2 T honey
  • 1/4 cup soy sauce (or coconut aminos or tamari)
  • 1 T olive oil

Instructions

  • Preheat oven to 400 F.
  • Mince 3 cloves garlic.
  • Cut 2 carrots into coins
  • Cut baby bok choy lengthwise in half. 
  • In a small container combine: 1/4c soy sauce, 1T sesame oil, 2T honey & 3 minced garlic cloves.
  • Brush ~1/2 of the glaze on all sides of chicken thighs. Toss carrots, mushrooms & bok choy w/ 1T olive oil & 1T soy glaze.
  • Place chicken & carrots on sheet pan and cook ~ 20 mins.
  • Remove pan from oven & brush Chicken w/ remainder of soy glaze. Turn carrots and add bok choy & mushrooms.
  • Cook an additional 10-12 minutes or until chicken is cooked through, 165 F.
