Sheet Pan Garlic Soy Chicken Thighs w/ Veggies

- 3 cloves garlic
- 3 carrots
- 8 oz shiitake mushrooms
- 1 bunch baby bok choy
- 1 # boneless, skinless chicken thighs
- 1 T sesame oil
- 2 T honey
- 1/4 cup soy sauce (or coconut aminos or tamari)
- 1 T olive oil
Preheat oven to 400 F.
Mince 3 cloves garlic.
Cut 2 carrots into coins
Cut baby bok choy lengthwise in half.
In a small container combine: 1/4c soy sauce, 1T sesame oil, 2T honey & 3 minced garlic cloves.
Brush ~1/2 of the glaze on all sides of chicken thighs. Toss carrots, mushrooms & bok choy w/ 1T olive oil & 1T soy glaze.
Place chicken & carrots on sheet pan and cook ~ 20 mins.
Remove pan from oven & brush Chicken w/ remainder of soy glaze. Turn carrots and add bok choy & mushrooms.
Cook an additional 10-12 minutes or until chicken is cooked through, 165 F.
