In a large bowl, combine 1 pound of turkey, 8 oz of chorizo, 2 tbsp of mayonnaise,1/3 cup of bread crumbs, and 1/4 tsp of salt. Roll into golf ball-sized meatballs.
Place the meatballs on a parchment lined baking sheet and cook for ~20 minutes until cooked through.
Rice and Broccoli
While meatballs are cooking, add 1c rice + 2c water & bring to a boil. Cover, turn heat to low, & simmer ~20 mins until liquid is absorbed.
Place 20oz broccoli florets to a steamer pot & cook ~12 mins or until fork tender. Sprinkle w/ salt.
Creamy Salsa
In a med container combine: 4oz sour cream + 1/2c salsa verde.
