Lemon-Parsley Pork Chops with Cabbage & Apples

Are you looking for something a little different for your St. Patrick's Day Celebration from the standard corned beef and cabbage? But, you still want a nod to tradition. Then try my Lemon-Parsley Pork Chops with Cabbage & Apples.

The zesty lemon-parsley marinade pairs perfectly with thin-cut pork chops and makes them so juicy and tender. You could also sub chicken if you need a pork substitute. Holiday bonus: green parsley for good luck!

St. Patrick's Day wouldn't be complete without cabbage! I suggest making extra cabbage & apples for breakfast the next day. Serve with sausage and fried eggs – the perfect post-holiday brekkie!
