How to Make Chimichurri Sauce (and 5 ways to use it!)

Wondering how to make chimichurri sauce? It's super simple with my 7 ingredient chimichurri sauce recipe. (Pssst. this is a totally Paleo sauce too!)

One of my favorite ways to make life easier (and more delicious!) for my future self is to make a double or triple batch of a sauce and freeze the portions I don’t need.

My chimichurri sauce recipe is great for this strategy because it’s incredibly versatile! If you have a batch of this simple Paleo sauce in your freezer, you can add it to pretty much any protein you have on hand and you will have a delicious meal.

Chimichurri is also packed with healthy herbs, which most of us don’t get enough of. In short, it's as nutritious as it is tasty!

I’ve included 5 of my favorite ways to serve this tasty sauce, but the options are truly limitless. I hope you love it!

Chimichurri Sauce

Ingredients

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 cloves garlic
  • 1/2 cup loosely packed fresh Italian parsley
  • 1/2 cup loosely packed fresh cilantro
  • 1/2 tsp salt
  • 1/4 tsp crushed red pepper

Instructions

  • Blend all ingredients on high until garlic and herbs are chopped.

What is Chimichurri Sauce?

Never heard of chimichurri sauce? You're in for a treat!

Originally from Argentina, chimichurri is a raw sauce made largely of herbs and garlic, with some olive oil and vinegar. 

Some versions (chimichurri rojo) also have tomatoes and peppers, but we've kept it simple here.

5 Ways to use chimichurri sauce:

Chimichurri is traditionally used on grilled meat, but there's no reason to stop there! You'll want to put this on everything. Here are a few ideas to get you started.

1. Grilled shrimp or steak

Grill shrimp or steak and drizzle chimichurri sauce on top.

2. Dip

Dip raw (or roasted!) veggies in chimichurri sauce as is, or mix the sauce with greek yogurt to make a creamy dip.

3. Green Eggs

This sauce is delicious on egg dishes. Try it in place of the chili sauce in our Poached Eggs w/ Polenta.

4. Salad dressing

Chimichurri sauce makes a delicious dressing for my Shrimp Cobb Salad or Southwestern Steak Salad.

5. Burger

This zesty sauce is perfect to spice up a burger. Try it on our Black Bean & Quinoa Burgers or BLTA Burger!

How to make Chimichurri Sauce meal-prep-friendly

If you've followed me at all, you know I'm all about the meal prep. There are a couple of different ways you can go if you want to meal prep Chimichurri Sauce.

First, at the very least, you can wash your herbs ahead of time. I actually recommend washing and chopping all of your produce at the same time. This saves so much time versus getting out and washing your knives and cutting board every day! Just make sure the herbs are totally dry before you store them so they stay fresh.

Alternatively, make the entire sauce recipe during your weekly meal prep and use it as needed during the week. It comes together super fast and will make weeknight dinner time so much easier!

If you have any leftover, freeze it in an ice cube tray and store the cubes in a freezer bag or container. That way you can easily thaw however much you need next time you're looking to spice up a recipe!

What are the nutritional benefits of this recipe?

Sauces can kind of make or break a recipe when it comes to nutrition. It's easy to get carried away with a less-than-healthy sauce and kind of ruin a nutritious plate of protein and vegetables.

You don't have to worry about that here! This Paleo chimichurri sauce actually adds to the nutrition of your plate due to the fact that it's packed with good-for-you herbs. Eat up!

  • Olive Oil: Because of the type of fat it contains, olive oil may reduce inflammation. It also reduces the risk of Alzheimer's, stroke, and heart disease. Make sure to get high quality extra virgin olive oil, as it retains more antioxidants and nutrients.
  • Garlic: Used in homeopathic remedies for thousands of years, Garlic may reduce the risk of heart disease, high cholesterol, and some types of cancer. It's certainly a healthy way to add flavor!
  • Parsley: It's not just a garnish my friends. Parsley is packed with Calcium, Vitamin A, Vitamin C, and Vitamin K. As a result, this herb is great for your immune system, eye health, bone health, heart health, and blood sugar levels – pretty much everything!
  • Cilantro: Did you know cilantro is used medicinally to treat several conditions? Cilantro comes from the coriander plant which can help lower blood sugar, fight inflammation, and reduce blood pressure. It also potentially improves memory and eases anxiety. To sum up, it's a great one to eat more of!

What if I HATE cilantro?

I personally love cilantro, however, I understand that it's not for everyone! It's a love-it or hate-it kind of a thing. If your'e squarely in the hate-it camp, don't despair, you don't have to go without this tasty sauce.

Simply sub more parsley for the cilantro, or add another herb like oregano in its place.
