Snickerdoodle Bars – an easy Keto fat bomb recipe!

This easy Keto Fat Bomb recipe is delicious, whether you're Keto or not. It's the perfect Keto snack recipe, easy Paleo dessert, or simple sugar free treat for the whole family!

I developed this Snickerdoodle Bar recipe as a Keto fat bomb for our Keto menus, but it's just too good not to share with everyone.

Whether you follow a Ketogenic diet or you're simply looking for a healthy snack that tastes like a cookie, this recipe is totally delicious (and kid-friendly!)

Totally sugar free, these bars get their sweetness from monk fruit powdered sweetener. Have you tried monk fruit yet? While it's relatively new to the US market, it has been consumed for hundreds of years in Southeast Asia. Monk fruit powdered sweetener is extracted from the fruit and has zero calories. It sounds exotic but it can be found on Amazon!

Snickerdoodle Bars come together so quickly and require no baking – perfect as the weather continues to warm up!

Snickerdoodle Bars (Keto, Paleo, GF)

Ingredients

  • 1/3 cup almond butter*
  • 1/2 cup coconut butter*
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/8 tsp salt
  • 1 tsp vanilla extract
  • 1 Tbsp monk fruit powdered sweetener
  • cinnamon for dusting

Instructions

  • Combine all ingredients in food processor and process until smooth.
  • Pour into parchment-lined loaf pan and refrigerate until hardened.
  • Cut into 8 squares, dust with cinnamon and serve.

What is a Keto fat bomb?

Keto fat bombs are simply high fat snacks that help people following the ketogenic diet consume enough fat to stay in ketosis.

Getting enough fat for ketosis through meals alone can be difficult, which is where fat bombs come in!

So are they only for people on keto? Not at all!

Keto fat bombs can be totally healthy if they use healthy fats and they are a great alternative to prepackaged snack foods. Due to their high fat content, they keep you much more satisfied than traditional snacks.

So how do you use fat bombs? Fat bombs are great for a quick breakfast, pre- or post-workout snack, or mid afternoon snack. Snickerdoodle bars also work well as a satisfying and easy Paleo dessert!

What is coconut butter?

Coconut butter is simply the flesh of the coconut, blended until it reaches a butter-like consistency. In contrast to coconut oil, it contains the fiber and nutrients from the coconut. It also has a much stronger coconut flavor than coconut oil.

Make your own coconut butter or buy it on Thrive Market if you can't find it at your grocery store. If you do buy it, make sure you choose a coconut butter where the only ingredient is coconut – no added sugar!

What do I need to know about monk fruit?

Monk fruit is grown in Southeast Asia and has been used for a long time in medicinal teas. Powdered monk fruit sweetener is made from extract from the monk fruit and is up to 200 times sweeter than sugar. It is sometimes blended with other ingredients to cut the sweetness so make sure to taste test the version you buy to give you an idea of how sweet it is.

The extract contains no carbs or calories, making it perfect for Keto recipes like this one.

While we use powdered monk fruit sweetener here, it is also available in liquid and granulated form, so is pretty versatile in terms of how you use it.

Can I use a different sweetener for these snickerdoodle bars?

I get it. I'm sometimes hesitant to buy a “specialty ingredient” just for one recipe when I don't know if I'll ever use it again.

You don't have to use monk fruit sweetener, but know that it's not a one-to-one replacement for other sweeteners like powdered sugar.

Monk fruit sweetener is super concentrated so 1 Tablespoon of monk fruit is way sweeter than 1 Tablespoon of powdered sugar or a different natural sweetener like honey or maple syrup.

If you really want to use a different sweetener, you could try simply omitting or using 1 Tablespoon of pure maple syrup and then adding a mix-in like chocolate chips or dried cherries to add some more sweetness.

Simply adding more maple (or powdered sugar) would throw off the ratio of liquid to solid ingredients and change the texture – feel free to experiment though!

What are the nutritional benefits of this easy Keto fat bomb / easy Paleo dessert?

In addition to tasting just like a cookie, these Snickerdoodle Bars actually offer quite a bit of nutrition, especially in the form of healthy fats. Here's the breakdown!

  • Coconut: Coconuts provide copper, iron and selenium. They're also very high in manganese, which is beneficial for metabolism and bone health. Because this recipe calls for coconut butter, which is simply ground up coconut meat, it retains all of these good benefits!
  • Almond butter: High in Magnesium, Vitamin E and Potassium, almonds are good for your heart and also help lower LDL cholesterol. One serving of almonds also has as much calcium as 1/4 Cup of milk!
  • Cinnamon: Frequently used in traditional medicine, cinnamon is good for your heart and also may help stabilize blood sugar. Research also suggests that cinnamon may help lower cholesterol and blood sugar.
  • Nutmeg: Packed with antioxidants, nutmeg is anti-inflammatory and also has antibacterial properties. It may also be good for your heart, your blood sugar, and even your mood!
