How to Cook Black Eyed Peas

My NYE recipes are healthy takes on the classics – black eyed peas and greens! I promise they're just as delicious as they are healthy.

Last year for NYE, me & my friends were scattering for various parties. But I hosted a small dinner party before we went our separate ways. It was so nice that this year I'm doing the same! B and I actually have no plans post-dinner so are hoping for a quiet, early night. 

I'm carrying over a few of the fun “good luck” dishes I did last year: black-eyed peas for good luck and greens, which are supposed to bring in lotsa green in the new year $$! I did collards last year, but this year will do my favorite, swiss chard, it cooks super fast and can be chopped ahead of time along with the garlic. 

I also recently read pomegranates are a traditional NYE food, good for health & fertility. I have some fresh kernels on hand to throw into champagne glasses and may buy pom juice for fun cocktails. Black-Eyed Peas

Ingredients

  • 4 slices bacon
  • 1 onion
  • 16 oz black-eyed peas
  • diced tomatoes
  • green chilies (I sub for fresh chopped jalapeno)
  • chile powder
  • s&p

Simple Sauteed Greens

Ingredients

  • 1 bunch greens, stems removed/discarded
  • 1 clove garlic, chopped

Instructions

  • Finely chop leaves.
  • Heat 1/2T oil or butter in large sauté pan.
  • Saute garlic & greens for ~5 min. Season w/ S&P.

Notes

Note: this recipe can easily be increased- I'll do about 6 bunches for my NYE dinner of 6-8 people.
