Using whole food ingredients, the bright, bursting flavor of fresh blueberries and the deep sweetness of honey shine through here. The crust is made with almond flour, cocoa powder, salt, coconut oil, an egg and honey. It's light and crumbly with a depth of flavor that really sets this tart apart.
The filling for this easy blueberry tart is quite simple. It calls for blueberries, chia seeds, water, vanilla and honey. That's it!
Finally, while it's not absolutely required, I encourage you to top the tart with homemade coconut milk whipped cream. It's simple and SO tasty, whether you're dairy free or not. Before we get to the recipe, I want to walk you through the basics of how to make this easy blueberry tart – it's quite simple!
You'll start by making the tart crust. Preheat your oven to 350F and grease your tart pan with butter or coconut oil. Then mix together your dry ingredients, almond flour, cocoa powder and salt. Next combine melted coconut oil, honey and an egg in a separate bowl. Add the wet ingredients to dry and mix well before pressing into your greased tart pan.
After making your gluten free tart crust, Bake for 12-15 minutes until the crust is slightly firm. Let it cool and then refrigerate while you make your filling.
To make the filling for this easy blueberry tart, add blueberries, honey and water to a pot. Bring it to a boil and then simmer for about 15 minutes over medium heat. Next add chia seeds to the filling mix and simmer for 5 more minutes. Let the filling cool and then store in the fridge until you're ready to serve the blueberry tart.
Your final step is to make coconut whipped cream. All you need to do is add the solid part of coconut cream from a can of full fat coconut milk along with honey and vanilla to a bowl and whip with a hand mixer until it reaches a whipped cream consistency. You can leave the liquid, or coconut water, from the can of coconut milk for a smoothie!
When you're ready to serve the tart, simply pour the prepared filling into your crust, top with homemade whipped cream and enjoy!
Easy Blueberry Tart with Gluten Free Tart Crust
Ingredients
For the Crust
- 2 cups almond flour
- 1/4 cup cocoa powder*
- 1/4 tsp salt
- 1/4 cup coconut oil
- 1 egg
- 1/4 cup honey
For the Filling
- 2 pints blueberries
- 1/2 cup honey
- 1/3 cup water
- 3 T chia seeds
- 1 tsp pure vanilla extract
For the Coconut Whipped Cream
- 15 oz coconut milk* (solid part only - refrigerate can overnight to make it easier to separate solid from liquid)
- 1 T honey
- 1 tsp vanilla*
Instructions
For the Crust
- Preheat oven to 350 F. Grease a tart pan and set aside.
- In a medium bowl combine: 2 cups almond flour, 1/4 cup cocoa powder & 1/4 tsp salt. In a separate bowl whisk together 1/4 cup melted coconut oil, 1 egg & 1/4 cup honey. Add wet ingredients to dry ingredients and mix well. Press dough into tart pan, pressing it up the sides of the pan. Bake 12- 15 mins until crust is slightly firm. Set aside to cool. Keep in refrigerator until ready to serve.
For the Filling
- In a medium pot combine: 2 pints blueberries, 1/2 cup honey & 1/3c water. Bring to a boil and simmer over medium heat for 15 mins. Add 3T chia seeds & simmer 5 more minutes. Remove from heat and add 1 tsp vanilla and allow to cool. Store in a med container in the refrigerator until it’s thickened and set. Keep in refrigerator until ready to serve.
- When ready to serve, fill tart crust w/ blueberry filling.
For the Coconut Whipped Cream
- In a medium bowl add solid part of coconut cream from 15oz can coconut milk (use liquid in your next smoothie).
- Add 1T honey & 1tsp vanilla. Mix w/ a hand mixer until you get whipped cream consistency. Spread over blueberry layer. Serve.

Experimenting with baking recipes is challenging but there are a couple of changes you can make. If you'd like to mix up the fruit, this chocolate tart crust would be delicious with other berries as well. Try a mix or go with raspberries or cherries – you can't go wrong!
To make sure you get the best results on this easy blueberry tart, here are a few tips to keep in mind:
- Make sure to thoroughly grease the tart pan so you can easily remove the tart.
- Let the crust cool completely before adding the filling.
- For best results, add the filling to the tart crust right before serving. Also wait to top the tart with the coconut whipped cream until right before serving.
- To make it easier to make your coconut whipped cream, refrigerate your can of coconut milk overnight. You'll then be able to easily scoop off the solid portion.
