Sweet Potato Bird's Nests is such a fun breakfast recipe that can be made for an everyday breakfast or for special occasions like a birthday or Mother's Day breakfast in bed!
One thing that I love about the Sweet Potato Bird's Nests recipe is that it's a great one to make with children. Kids will absolutely love using a spiralizer to make oodles and oodles of veggie noodles, and you will be teaching them invaluable kitchen skills and healthy eating habits. Plus, what kid doesn't love eating their food in a fun form. Tip: by doing this you might get them to try something new as well!
The Sweet Potato Bird's Nests recipe is super flexible, so feel free to swap the sausage for bacon or ham and sweet potato for spiralized zucchini or butternut squash. Don't have a spiralizer? That's okay! You can get one here or we have tips in the recipe for using mashed sweet potato instead. Enjoy!
Sweet Potato Bird’s Nests
Ingredients
- 8 muffin liners (optional)
- 1 large sweet potato (OR sub 1 bag spiralized sweet potato)
- 1 small yellow onion
- 3 baby portobello mushrooms
- 12 ounce breakfast sausage (Read all ingredient lists; avoid added msg, sugar, gluten, salt, etc.)
- 8 eggs (omega-3)
- S&P
Instructions
- Preheat oven to 350F. Grease or line 8 cups of a muffin pan.
- With a spiralizer, spiralize 1 large sweet potato. *NOTE: If not using a spiralizer, bake the sweet potato by wrapping in foil and baking in 350F oven for 1-1½ hr or until knife inserts easily. Remove from oven, cool, and mash).
- Finely chop 1 small onion for ~2T and dice 3 mushrooms. Set aside together.
- In a large skillet, brown 12oz ground breakfast sausage. Cool.
- Place spiralized sweet potato, evenly, into muffin tins until they are about halfway full.
- Crack 1 egg and place on top of spiralized sweet potato.
- Top w/ ground sausage, 2T yellow onion & diced mushrooms. Sprinkle w/ S&P, cover w/ foil and bake for 15 mins.
- Remove foil & cook for ~5 mins to crisp sweet potato if desired.
