If there is one recipe that will make you roll your eyes or shrug your shoulders, it's probably Baba Ganoush.
I completely understand! First, the name, Baba Ganoush. Just what is that anyway? Second, isn't Baba Ganoush a complicated Mediterranean recipe? Lastly, eggplant!
Baba Ganoush is quite simply a dip made from roasted eggplant (you can also grill it!), lemon, olive oil, tahini and a couple pantry spices. Really, that's it! The smooth and creamy texture of Baba Ganoush makes it the perfect appetizer or snack with cut veggies or GF crackers, or enjoy at lunch as a spread in a veggie sandwich or lettuce wrap.
Please give this one a try before you completely shrug it off. I think it will become a summer staple!
Baba Ganoush Recipe
Ingredients
- 1 eggplant
- 3T tahini
- 1 lemon
- 3 cloves garlic
- 1/8 tsp cumin
- 1/8 tsp paprika
Instructions
- Preheat oven to 350 F.
- Line baking sheet w/ parchment paper. Roast 1 whole eggplant for ~45 min - 1 hour or until tender. Allow to cool.
- Cut cooked & cooled eggplant in half and scoop out flesh.
- Add flesh to food processor (or blender) and add the following: 3T tahini + juice of 1 lemon + 3 cloves garlic + 1/8tsp cumin + 1/8tsp paprika
- Blend until pureed.
- Serve with cut veggies and/or GF crackers.
