Minted Fruit Salad

Minted fruit salad makes the perfect healthy brunch recipe or healthy Easter dessert. And with only 6 ingredients, it couldn't be easier!

I always love a good brunch and Easter is the perfect excuse.

This minted fruit salad with strawberry and orange is a wonderful addition to any brunch spread. In true Prep Dish style, you can totally prep it ahead so you can focus on bunnies and baskets on Easter morning, not be stuck in the kitchen.

If you have leftover mint, try adding it to a pitcher of water or iced tea, or even to a mimosa – it's delish and totally elevates the table.

You could definitely use this for a light and healthy Easter dessert as well!

Minted Fruit Salad w/ Strawberry & Orange

Servings: 0

Ingredients

  • 1 small bunch mint
  • 5 oranges
  • 1 pint strawberries
  • 2 T olive oil
  • 1 lime
  • 1 T honey

Instructions

  • Wash all produce.
  • Finely chop 1 bunch mint for ~2T.
  • Peel and slice 3 oranges into segments (option to chop if segments are large), removing white
    piths first.
  • Slice 1 pint of strawberries.
  • For dressing, whisk together 2T olive oil + juice of 1 lime (~1T) + juice of 2 oranges (~¼c) + 1T
    honey + 2T chopped mint.
  • Top each portion of oranges and strawberries with 1-2T of dressing.

How can I meal prep minted fruit salad?

I am ALL about prepping ahead – it's kind of my thing. But I think it's even more important for holidays and special occasions.

Have you ever invited people over and then felt like you barely got to talk to anyone because you were cooking the whole time? Yeah, it's kind of the worst. Fortunately, there's another way! Choose prep-ahead dishes like this one and you'll be able to actually enjoy the holiday.

To prep ahead, simply make the dressing the day before and store in the fridge. (Bonus tip – a simple handheld citrus juicer makes it super easy to get the juice out for the dressing.) You can also wash and chop the fruit the day before. On the day you plan to serve, bring the dressing to room temperature and combine with the fruit. So easy!

Can kids help prep minted fruit salad?

I think it's so fun to get kids involved with preparing for the holidays. Sure, they love waking up to a basket of treats or searching for eggs, but they also love the anticipation. Inviting your child to help you prepare a special meal gives them such a sense of pride and accomplishment.

One super easy task even a toddler can help with is tearing mint leaves.

I also want to share a food-prep-kid hack though! Did you know you can use an egg slicer to slice strawberries?

Preschool aged kids love using special tools like this and can do it totally independently. Just wash the strawberries first and slice the green tops off. Show your child how to place the strawberry in the egg slicer and let them prep away!

What are some variations of this healthy brunch recipe?

While I think strawberries and oranges are totally delicious with mint, you can easily change up the fruit and you'll still have a tasty and healthy brunch recipe.

Try using pineapple or mango for more of a tropical feel. If you make minted fruit salad in the summer, try using watermelon, which pairs beautifully with mint and lime.

You could even choose raspberries, blackberries, and blueberries if you want to make it really easy – no chopping required!

In short, you can use almost any fruit and have a tasty and healthy brunch recipe in just a few minutes.

What are the nutritional benefits of minted fruit salad?

Every single one of the 6 ingredients in this easy brunch recipe offers some serious nutrition. This is definitely one you can feel good about!

  • Mint: Rich in vitamin A, iron, and manganese, mint is a delicious way to add a little nutrient boost to your meal. Since vitamin A is fat soluble, it's best absorbed when consumed with fat – for instance, the olive oil in this salad! Moreover, mint can help with IBS and indigestion.
  • Strawberries: Strawberries are full of vitamin C and antioxidants. As a result, they may help protect against cancer. Furthermore, they can help lower blood pressure and increase good cholesterol – eat up!
  • Oranges: While oranges are famous for their vitamin C, they're also rich in folate, thiamine (vitamin B1) and potassium. In addition, the flavonoids found in oranges may protect against heart disease.
  • Lime: In addition to being rich in vitamin C, limes have antibacterial properties and may even help prevent asthma!
  • Honey: While honey is a sweetener and should be used sparingly, it does contain antioxidants and antibacterial properties, making it a great choice to add sweetness in moderation. Raw honey may be particularly beneficial.
  • Olive Oil: Due to the type of fat it contains, olive oil may reduce inflammation. It also reduces the risk of Alzheimer's, stroke, and heart disease. Make sure to get high quality extra virgin olive oil, as it retains more antioxidants and nutrients.
