Pork Roulades

Pork Roulades make a beautiful entree for a special occasion or date night. Better yet, these healthy pork chops have fewer than 10 ingredients!

Date nights have always been a priority for me and my husband. We're both busy entrepreneurs and if we don't set aside time on the calendar to connect, it's just not going to happen.

Once we started having kids, our “date nights” changed a bit. We're fortunate enough to have regular child care, but we also live in quite a rural area, far from most restaurants and night life. At the end of most days we're simply too tired to make the trek into the city for a date night.

Enter, the at home date night! In my mind, this is the perfect solution. We still put it on the calendar to make sure it happens but we don't have to spend all of that time driving into the city. One of my favorite at home date nights is a simple picnic but in the winter months that's not so appealing. For these nights, I love making something just a little bit special for us to enjoy after the kids are in bed.

The catch? I don't want to spend a bunch of time cooking when the little ones are finally asleep! Thus I've created some special, yet totally prep-able, recipes for just such occasions.

These pork roulades are definitely fancy enough for a special occasion or date night, but you can prep them ahead a few days before. Stick them in the oven before reading bedtime stories and they'll be ready to enjoy right after bedtime!

One last thing – just because this pork roulade recipe is special enough for a date night doesn't mean you shouldn't serve them to your kids! Give them some of the leftovers for lunch the next day. I'm not sure where people get the idea that kids don't like mushrooms but they actually have quite a mild flavor. I recommend giving them to your kids young, before they learn they're not supposed to like them 😉

Pork Roulades w/ Mushrooms

Ingredients

  • 1 1/2 T butter or olive oil
  • 8 oz baby bella mushrooms
  • 2 shallots
  • 1 garlic clove
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp onion powder
  • 1 T fresh sage (or 1 tsp dried)
  • 4 boneless, skinless pork chops
  • parchment paper

Instructions

  • Preheat oven to 375 F. 
  • Over medium heat, melt 1½ T butter (or olive oil) in large sauté pan.
  • Add 8oz diced baby bella mushrooms and 2 minced shallots. 
  • Cook until soft, ~5-10 minutes. 
  • Add 1 minced garlic clove and cook ~1 minute until fragrant. 
  • Add in 1⁄2 tsp salt, 1⁄2 tsp pepper and 1⁄2 tsp onion powder. Remove from heat and add ~1 T minced sage (or 1 tsp dried sage). Set aside. 
  • Line a butcher block/cutting board with parchment paper and tear off an additional sheet of parchment paper.
  • Place 1 pork chop between parchment paper & flatten w/ mallet until ~1⁄4” thick. Season both sides w/ S&P. Repeat w/ all chops. 
  • Take one flattened pork chop, place ~2 T of mushroom filling towards one end. Roll up pork chop and secure with a toothpick. Repeat with remaining chops. (Use metal or plain wooden toothpicks, soaking wooden toothpicks in water first.)
  • Brush roll-ups w/ 1⁄2 T melted butter (or olive oil). Bake for 15-17 mins, remove toothpicks, & broil for 2-3 mins or until golden brown.

What is the nutrition like for these pork roulades?

  • Pork: Pork provides substantial amounts of thiamine, selenium, zinc, vitamin B12, vitamin B6, iron and, of course, protein.
  • Mushrooms: There are of course many kinds of edible mushrooms but the ones you most commonly find in the grocery store are either white button mushrooms or crimini (baby bella) mushrooms. Mushrooms are an excellent source of the antioxidant selenium as well as B-vitamins, copper and potassium.
  • Shallots: With more fiber than other onion varieties, shallots also provide iron, potassium, folate and zinc. They're high in antioxidants and other beneficial plant compounds.
  • Garlic: Garlic has been used in homeopathic remedies for thousands of years and is thought to reduce the risk of heart disease, high cholesterol and some types of cancer.
  • Sage: Sage contains a substantial amount of vitamin K as well as small amounts of magnesium, zinc, vitamin B6 and iron. It's also full of antioxidants!

Yes! This is indeed a low carb pork chops recipe. Whether you're keto or just feel best when you eat low carb, this fits the bill.

When served with a low carb vegetable side, like roasted broccoli, mushroom & pork roulades make a super satisfying low carb dinner.

Are Mushroom Pork Roulades meal prep friendly?

Yes! While this looks like it would be too complicated for a weeknight meal, you can completely prep it ahead.

To make dinnertime more manageable, you can at the very least make the stuffing ahead. If you know you'll be tight on time the day you actually serve the roulades, go ahead and flatten the pork chops, stuff them and roll them. Store in an air tight container. All you'll have to do on the day-of is stick them in the oven!

What should I serve with these healthy pork chops?

Pork roulades are a versatile main dish. I like to serve with mashed sweet potatoes and roasted broccoli, but you really can't go wrong. This pork would be delicious with a simple side salad, over zoodles, or with roasted potatoes. The pork and mushrooms really are the stars so feel free to keep the sides simple!

How to Make a Roulade – Tips for Success

I know making roulades can be a little intimidating if you've never done it before. Here are a few tips for success!

  • Think small – Make sure to dice the mushrooms fairly small. This will help the stuffing stay in the pork chops once rolled!
  • Don't overstuff – I know, the filling is delicious. But make sure to leave some room to actually roll up your pork chop.
  • Don't skip the broiling! The extra 2-3 minutes makes all the difference.

What should I look for in high quality pork?

You've heard me talk about the benefits of grass fed beef, but is there a pork equivalent? What should you look for when buying pork to make sure you're getting the best product in terms of both nutrition and taste?

I look for three things – pasture raised, organic and heritage pork.

Similar to beef, pasture raised pork is healthier. Grass-fed meat is generally lower in overall fat, but higher in “good fats” like Omega-3's and conjugated linoleic acid (CLA). Both Omega-3's and CLA have been shown to potentially reduce the risk of cancer. Pasture raised is also higher in antioxidants and some vitamins.

Buying organic pork is important because it means the pigs were not given unnecessary antibiotics.

Heritage pork refers to the breeds of pigs found before farming was industrialized. Many of these breeds have become rare and hard to find with the increase of large-scale farms. Heritage farmers work to preserve traditional breed of hogs. Not only is the resulting pork generally healthier, as they're usually pasture raised, it also tastes so much better!

How do you roll a pork roulade?

To roll a pork roulade, you'll first flatten your pork chop. Place it between two pieces of parchment paper and flatten with a mallet until it's about 1/4″ thick. Then simply add your filling, roll up, and secure with a toothpick. (Use metal or plain, wooden toothpicks, soaking wooden toothpicks in water ahead of time.) Make sure not to overstuff your roulades for the best results!
