We've had several requests in the past for plans for camping meals, which to be honest, sort of puzzled me. While I love being outside hiking and have even done multi-day hikes (like the Salkantay trail in Peru!), I personally enjoy sleeping on a bed and leaving the meals to someone else. I guess you could say I've skirted around camping.
Well, in July we planned a trip to Iceland. Our trip was a scheduled stop on our way home from Israel in July to visit our Icelandic friend, Anna. Because it's expensive to eat out in Iceland and there isn't a lot of lodging once you get out of the major town of Reykjavik, we (Brook) decided we'd rent a camper van and see the sites. I was very hesitant but turns out, I loved it!
Camper vans are super popular in Iceland. They come with dishes, portable stove, pots & pans, and a cooler. This made prepping and preparing our camping meals pretty easy. Ours also came equipped with a mattress, sheets, pillows, a heater & black out curtains (key since it's light out for ~24 hours/ day in Iceland in the summer) … I'm not even sure if this counts as camping tbh.
After we picked up our camper van, we took it to Anna's hometown, Holar, on north side of the island. Anna's mom graciously prepared us a dinner of roasted lamb, potatoes, mushrooms (we had foraged mushrooms with Anna earlier in the day) and salad. It was perfect because, in true Prep Dish style, I used leftovers as the base of the first of our camping meals: Curried Rice Noodles w/ Leftover Lamb & Mushrooms.
Using just the bare minimum of tools, this meal came together quickly and kept us full and warm – it got quite chilly in the evenings…something us Texans aren't really used to, especially in July. The protein was pre-cooked, the rice noodles are easy to boil (you basically re-hydrate them), and the curry sauce was pre-made. So super simple!
Moral of this story is that camping meals can be healthy, tasty, and simple. Get creative, get organized, do some prep work (cook your proteins, precook noodles, make some bone broth, etc) and you will master your camping meals.

Camping Meal: Lamb Curry over Rice Noodles
Ingredients
- 1 pkg rice noodles
- Leftover (or Pre-Cooked) lamb roast, cut into bite sized pieces (Or sub with protein of choice)
- 1 jar curry sauce (OR sub marinara)
Instructions
- Bring a large pot of water to a boil and cook rice noodles according to package instructions.
- Over your campfire or on a portable stove top, reheat lamb (or protein of choice) for ~ 4-5 mins.
- Drain rice noodles and 1 jar curry (or marinara) sauce over noodles.
- Add lamb (or protein of choice) to noodles & sauce. Continue cooking for ~4-5 mins or until everything is heated through.
