Guacamole and Black Bean Sweet Potatoes

These Guacamole & Black Bean Stuffed Sweet Potatoes are simple & delicious. The perfect healthy weeknight dinner!

Sometimes the simplest dinners are the best! These guacamole and black bean stuffed sweet potatoes are so easy to put together but they're incredibly tasty and satisfying. With just a little bit of meal prep, these are perfect to enjoy on busy weeknights.

To make this dish, you'll start by roasting your sweet potatoes. This is a good step to complete during a weekly meal prep session as, while it's hands-off, it does take a bit of time.

Next, you'll chop your onion, garlic and cilantro. You'll then make the easy guacamole before sauteing the onion, garlic, black beans and a few spices. Finally, you'll build your stuffed sweet potatoes and enjoy the deliciousness that is this simple dinner.

Guacamole & Black Bean Stuffed Sweet Potatoes

Ingredients

  • 2 avocados
  • 1/2 red onion
  • 2 cloves garlic
  • 1/2 bunch cilantro
  • 4 medium sweet potatoes
  • 1 lime
  • 15 oz black beans
  • 1 tsp cumin
  • 1/2 tsp coriander
  • 1/4 tsp salt
  • 1 T olive oil

Instructions

  • Preheat oven to 375 F.
  • Pierce 4 sweet potatoes w/ knife. Bake ~45-60 mins or until knife slices through easily.
  • Chop ½ red onion. Set aside ~2T for guac.
  • Mince 2 garlic cloves.
  • Chop ½ bunch cilantro.
  • For guac, mix together cilantro, flesh from 2 avocados, 2T chopped red onion, salt to taste & juice of 1 lime.
  • Heat 1 T olive oil over med low heat. Add remainder of the chopped red onions & cook ~3-4 mins. Add 2 minced garlic cloves & cook an additional minute.
  • Add 15oz drained & rinsed black beans, 1tsp cumin, 1/2tsp coriander & 1/4tsp salt to the pan. Cook, stirring, ~4 mins.
  • Build sweet potatoes w/ black beans + guac.

  • For a weeknight dinner, I recommend roasting your sweet potatoes ahead of time. The rest of the recipe comes together so quickly.
  • Mix up the toppings! For more protein, add some ground beef cooked with taco seasoning. Add some cotija cheese if you like. The world is your oyster!

The combination of vitamin C and antioxidants make limes great for your immune system. Vitamin C is also highly beneficial for your skin, with anti-aging effects. Limes are also good for your heart, beneficial for preventing kidney stones and may even help prevent certain types of cancer.

Black Beans (Folate, Protein, Fiber)

High in folate, protein and fiber, black beans are super filling and nutritious. If beans don't agree with your stomach, try soaking and cooking them yourself rather than buying canned, as soaking can aid in digestion.

Cumin is known for a variety of health benefits including aiding in indigestion. Cumin is also an excellent source of iron and antioxidants.
