Eggs baked in avocado is such a fun and simple recipe (Just two steps!) and makes it easy to add in fresh produce to your breakfast. For a lot of people, it can be hard to fit in fruits and vegetables in the morning and still get a hearty and delicious meal to keep them full until lunch. This recipe includes high-protein eggs and avocados packed with healthy fats to keep you full and focused throughout the day!

All you have to do is split an avocado in half, crack an egg into each half, and throw it in the oven and voila! You have a healthy and delicious breakfast.

Eggs Baked in Avocado

Ingredients

  • 1 avocado
  • 2 eggs
  • S&P

Instructions

  • Pre-heat oven to 425 F.
  • Cut an avocado in half and remove the pit.
  • Crack 1 egg into each avocado and bake for 18-24 min or desired egg doneness.
  • Season w/ S&P.
