This steak and potato salad makes the best meal prep salad. Get the steak salad recipe along with the BEST dressing for steak salad.

I LOVE a good steak salad. It's the perfect balance of hearty and light. Always filling but never heavy, this is my kind of meal.

The steak salad recipe itself is quite simple. You'll combine mixed greens, green onions, steak and potatoes with a delicious homemade red wine vinaigrette. That's pretty much it! When you're cooking something as inherently tasty as a well-seasoned steak, I say don't overthink it.

To make the salad, you'll start by boiling the mini potatoes.

Next, you'll sprinkle steak seasoning over the steak and cook for 3 minutes per side in a sauté pan.

While the steak rests, you can mix up the homemade red wine vinaigrette. Next, mince the green onions, cut the cooked potatoes in fourths and slice the steak. Combine on a plate and you'll have the best steak salad recipe ever!

Ingredients

For the Red Wine Vinaigrette:

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/2 tsp Dijon
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 T honey

For the Steak Salad:

  • 1 # flank steak
  • 1 # mini new potatoes
  • 1/2 bunch green onions
  • 1 T steak seasoning
  • 10 oz mixed greens

Instructions

For the Red Wine Vinaigrette:

  • In a small container combine: 1/2c olive oil, 1/4c red wine vinegar, 1/2tsp Dijon, 1/4tsp salt, 1/4tsp pepper & 1T honey.

For the Steak Salad:

  • Bring a pot of water to a boil and add 1# mini potatoes. Cook ~20 mins until fork tender.
  • Sprinkle steak w/ 1T steak seasoning. 
  • Heat a large sauté pan over med heat. Add steak & cook ~3 mins per side or until desired doneness. Allow steak to rest for 10 mins.
  • Mince ½ bunch green onions.
  • Cut potatoes into 4ths & sprinkle w/ salt. Slice steak against the grain.

  • Grill the steak if you like. The recipe instructs you to cook the steak on the stovetop, which is certainly quicker. That said, if you feel like breaking out the grill, that smoky flavor is hard to beat.
  • Don't skip the homemade vinaigrette. I totally get that you don't have time to make everything from scratch. As an entrepreneur with three young sons, neither do I! However, salad dressing is something I always make from scratch, both for the quality ingredients and the unbeatable flavor.
  • Use quality steak seasoning. Whenever you have a simple recipe like this one with few ingredients, the ingredients need to be high quality for the flavors to shine through. Best Dressing for Steak Salad – Homemade Red Wine Vinaigrette

I am a huge fan of homemade salad dressings. Why? Many bottled salad dressings have low quality oils and excess sugar, in addition ingredients I've never even heard of. If you do find a store-bought salad dressing with quality ingredients, it's likely going to be quite pricey.

Alternatively, homemade salad dressings are EASY and much more budget-friendly. I also happen to think they taste quite a bit better than store-bought. You can check out my favorite DIY salad dressings for ideas.

For this steak salad, I've included a homemade red wine vinaigrette, which I think is one of the best dressings for steak salads. All you need is olive oil, red wine vinegar, dijon, salt, pepper and honey. So simple! The “bite” from the red wine vinegar and dijon perfectly offsets the richness of the steak.

Homemade balsamic vinaigrette (simply olive oil + balsamic vinegar works!) is also quite tasty on steak salad.

Is this a healthy steak salad?

Yes! Full of protein and veggies and made with real, whole-food ingredients, this is certainly a healthy steak salad. 1 serving contains about 38 grams of protein, so this is a salad that will actually keep you full. No wimpy salads for me, thanks!

Here are a few of the nutritional highlights:

Olive Oil (Vitamin E, Vitamin K, Monounsaturated Fats, Antioxidants)

Due to the type of fat it contains, olive oil may reduce inflammation. It also reduces the risk of Alzheimer's, stroke and heart disease. Make sure to get high quality extra virgin olive oil, as it retains more antioxidants and nutrients.

Red Wine Vinegar (Acetic Acid, Antioxidants, Resveratrol)

The primary ingredient in red wine vinegar is, not surprisingly, red wine. This means that red wine vinegar boasts many of the nutritional powerhouses that red wine is famous for, like resveratrol. Red wine vinegar is quite beneficial for blood sugar control and it may also have heart health benefits.

Beef (Iron, Zinc, B Vitamins, Selenium)

Particularly high in iron and zinc, beef also contains vitamin B6, vitamin B12, selenium, niacin, phosphorus and, of course, lots of high quality protein. Grass-fed beef is up to 500% higher in conjugated linoleic acid (CLA). CLA may help reduce the risk for some types of cancer and type 2 diabetes. Grass-fed beef also contains up to 5 times as many Omega-3s as conventional beef, so it's worth going with grass-fed if you can.

Potatoes (Vitamin C, Vitamin B6, Potassium, Manganese, Antioxidants)

They get a bad rap sometimes, but the reason potatoes are considered unhealthy by some has much more to do with preparation than nutritional content. Sure french fries won't make the cut for superfoods, but neither would deep fried brussels sprouts…. Cooked in a healthy way, potatoes can be quite nutritious. They offer vitamin C, vitamin B6, potassium, manganese and antioxidants. Much of the vitamin content is in the peel, so make sure to leave the skin on!

Green Onions (Vitamin C, Vitamin K, Folate, Fiber, Phytonutrients)

Also known as scallions, green onions are a good source of fiber. They also contain allicin, which scientists think may help prevent cancer growth. Like other onions, green onions are also full of antioxidants.

Mixed Greens (Vitamin A, Vitamin K, Vitamin C, Folate, Phytonutrients)

Mixed greens are an excellent choice for salad because each type of lettuce offers unique nutritional benefits. With mixed greens, you get a variety, upping the nutritional goodness of your meal! Greens are particularly good for brain health, eyesight, strong bones and healthy blood vessels. Due to its phytonutrients, lettuce is also great for reducing inflammation. Red leaf lettuce, which is often included in mixed greens, is particularly high in these powerful plant compounds.

How to Meal Prep this Steak Salad Recipe

The only thing you need to do to prep ahead is to make the red wine vinaigrette. Store the vinaigrette in the fridge and simply bring to room temperature while you cook the steak and potatoes for the salad. You can also wash your potatoes and green onions ahead of time if you like, to make dinnertime a little easier on the night you serve this meal.

With the vinaigrette made ahead of time, preparing this steak and potato salad is quick and easy, even on a weeknight. You'll simply need to boil and slice the mini potatoes, cook the steak and chop the green onions.
