My homemade strawberry popsicle recipe has just 4 ingredients. Coconut milk makes them irresistibly creamy while pure maple syrup makes them perfectly sweet.
We're big fans of homemade popsicles in my house and my new creamy strawberry popsicle recipe just may be my favorite yet!
Why? Well, first of all, these little beauties require just 4 ingredients, meaning I can make them on a whim, much to my sons' delight. Second of all, summer strawberries just can't be beat here. I've listed frozen strawberries in the ingredients so you can make these tasty treats all year BUT if you have some perfectly ripe summer strawberries on hand, you should totally use those instead. Or, if you find yourself out strawberry picking this year, stash some of the extra in the freezer to make your future popsicle dreams come true.
To make this creamy strawberry popsicle recipe, you'll need full fat coconut milk, frozen (or fresh) strawberries, vanilla extract and pure maple syrup. That's it! You simply run some cold water over the strawberries to thaw, dump everything in the blender, blend until smooth, and pour into popsicle molds. (These are the ones I love but you can also find silicone molds.)

Creamy Strawberry Popsicle Recipe
Ingredients
- 10 oz frozen strawberries (or sub fresh)
- 1 tsp vanilla extract*
- 3 T maple syrup
- 14 oz can full fat coconut milk
Instructions
- Run cold water over 10oz frozen strawberries to thaw.
- In a blender combine: 10oz thawed strawberries + 14oz coconut milk + 3T maple syrup + 1tsp vanilla. Blend until smooth.
- Pour into popsicle molds and freeze.

Homemade strawberry popsicles are so simple, you really can't mess them up! Still, here are a few tips for maximizing the deliciousness of these summer treats.
- Use full fat coconut milk. While you could try this recipe with fat free coconut milk, the full fat variety gives this strawberry popsicle recipe such amazing creaminess, I really wouldn't stray from it. The fat also makes these treats more filling.
- Use the best strawberries you can find. As I mentioned above, if you're growing strawberries or it you live somewhere where you can go strawberry picking, take advantage of those peak summer strawberries and use them here! With such a minimal ingredient list, the flavor really shines through.
- Try different fruits! This homemade popsicle recipe is so versatile. Try it with frozen cherries, frozen mango, frozen blueberries…you get the idea. You really can't go wrong!
- Include sliced strawberries. While you certainly don't have to do this, including a few slices or chunks of strawberries in these pops makes them so pretty. To do this, simply leave a few strawberries out of the blender, chop, and stir them in after you've blended the other ingredients.

Pure Maple Syrup (Manganese, Zinc)
1/3 cup of pure maple syrup contains 165% of the recommended dietary intake for manganese and 28% for zinc. It also has a lower glycemic index than table sugar, reducing blood sugar spikes.
