Lemon-Parsley Pork Chops with Cabbage & Apples

Pork Chop with Cabbage & ApplesAre you looking for something a little different for your St. Patrick's Day Celebration from the standard corned beef and cabbage? But, you still want a nod to tradition. Then try my Lemon-Parsley Pork Chops with Cabbage & Apples.

The zesty lemon-parsley marinade pairs perfectly with thin-cut pork chops and makes them so juicy and tender. You could also sub chicken if you need a pork substitute. Holiday bonus: green parsley for good luck!

St. Patrick's Day wouldn't be complete without cabbage! I suggest making extra cabbage & apples for breakfast the next day. Serve with sausage and fried eggs – the perfect post-holiday brekkie!

Lemon-Parsley Pork Chops with Cabbage & Apples

Servings: 4 people

Ingredients

Lemon Parsley Pork Chops

  • 2 lemons
  • 1/2 c olive oil
  • 1 bunch fresh parsley
  • 4 thin-cut, bone-in pork chops
  • S&P, to taste

Cabbage & Apples

  • 1 head purple cabbage
  • 2 granny smith apples
  • 1 tsp apple cider vinegar optional
  • 1 tsp butter or ghee
  • S&P, to taste

Instructions

For the Pork Chops:

  • Make marinade by blending the following until parsley is chopped: juice of 2 lemons, 1/2c olive oil, large handful of fresh parsley, 1tsp salt **Note: don't go to far or parsley will become bitter.
  • Marinate pork chops in marinade for ~30 minutes to 1 hour.
  • Pre-heat oven to 425 F
  • Remove pork chops from marinade and place on baking sheet in a single layer.
  • Bake for ~12-15 minutes depending on thickness, or until internal temperature reaches 150 F

For the Cabbage & Apples:

  • Chop cabbage into thin 2” strips (can also use a food processor attachment for this).
  • Chop 2 granny smith apples into bite-sized pieces.
  • Heat 1tsp butter (OR ghee or coconut oil) over med heat & place chopped apple and cabbage in pan. Season with S&P and add a splash of apple cider vinegar, optional, to taste.
  • Cover and cook over medium heat for ~25-20 minutes, stirring occasionally.
  • Remove lid and cook for an additional 5-10 minutes of cooking.
