These carrot cake energy balls make the perfect snack or healthy dessert. They're gluten free, paleo and vegan so anyone can enjoy!
Easter is around the corner and I am serving these cute little carrot cake bites from our February Challenge. They are the perfect snack for kids and adults, and also sweet enough for a little dessert.
If you celebrate all things Easter, including the bunny, these are a perfect sweet treat for your table. After all, the bunny's favorite food is indeed the carrot…right? Or perhaps you can make the bites into bunny tails sticking out of yogurt. Ok…I'll stop with the cuteness.
Gluten Free and Paleo Carrot Cake Energy Balls
These bites are paleo and gluten free but even if you have guests with no dietary restrictions they'll be a hit! I love that these bites include carrots and dates for the main sweetener. If you want them less sweet simply decrease the amount of dates you use or omit the maple syrup. You can really make these your own!

Carrot Cake Bites
Ingredients
- 1/2 cup carrots chopped
- 10 medjool dates
- 1/4 cup cashew butter
- 1/2 cup walnuts
- 1 T maple syrup
- 2 tsp ginger root grated
- 1 tsp chia seeds
- 1/2 tsp vanilla
- 5 T unsweetened coconut shreds
Instructions
- In a food processor combine all ingredients except for the unsweetened shredded coconut. Pulse until combined.
- Form batter into 1-inch balls (batter will be sticky).
- Spread the shredded coconut onto parchment paper. Roll balls into the coconut and evenly coat. Store in refrigerator.
These were easy and delicious! Only made 13 balls for me. No need to put maple syrup – they were sweet enough with the dates! Thanks
