I don't know about you but I'm always on the lookout for quick, weeknight dinners with big flavor. Just because I don't have hours to spend in the kitchen every night doesn't mean I don't want to share delicious dinners with my family. I'm guessing you're the same.
These sheet pan garlic soy chicken thighs and veggies deliver in a big way. You'll make a simple soy glaze with soy sauce, honey, fresh garlic and sesame oil. This glaze will flavor both the chicken and the veggies accompanying the chicken in this sheet pan dinner.
You'll start by chopping the veggies and making the glaze. You'll then brush some of the glaze on the chicken thighs and toss the veggies in a bit of glaze as well. After roasting the chicken and carrots for 20 minutes, you'll briefly remove the chicken from the oven to brush on more soy glaze, and also add the baby bok choy and mushrooms. After 10-12 more minutes in the oven, you'll have a delicious and healthy dinner ready!
As written, the recipe includes carrots, shiitake mushrooms and baby bok choy but it's flexible! You can use whatever veggies you love the most. Broccoli, cauliflower and bell peppers would all be delicious. Just make sure to add any quicker cooking veggies later in the process so they don't overcook.
If you need to stretch this sheet pan meal to cover more servings, it's delicious served over rice.
Sheet Pan Garlic Soy Chicken Thighs w/ Veggies
Ingredients
- 3 cloves garlic
- 3 carrots
- 8 oz shiitake mushrooms
- 1 bunch baby bok choy
- 1 # boneless, skinless chicken thighs
- 1 T sesame oil
- 2 T honey
- 1/4 cup soy sauce (or coconut aminos or tamari)
- 1 T olive oil
Instructions
- Preheat oven to 400 F.
- Mince 3 cloves garlic.
- Cut 2 carrots into coins
- Cut baby bok choy lengthwise in half.
- In a small container combine: 1/4c soy sauce, 1T sesame oil, 2T honey & 3 minced garlic cloves.
- Brush ~1/2 of the glaze on all sides of chicken thighs. Toss carrots, mushrooms & bok choy w/ 1T olive oil & 1T soy glaze.
- Place chicken & carrots on sheet pan and cook ~ 20 mins.
- Remove pan from oven & brush Chicken w/ remainder of soy glaze. Turn carrots and add bok choy & mushrooms.
- Cook an additional 10-12 minutes or until chicken is cooked through, 165 F.
