How to Make Roasted Sweet Potatoes

Learning how to make roasted sweet potatoes is a must! They're great for healthy meal prep and make the best Gluten Free / Paleo side dish.

Simple & delicious?! These 2 words sum up why I’m a sweet potato fan. Chopping and roasting sweet potatoes yields a quick & easy, crave-worthy side. I typically roast sweet potatoes with a mixture of spices (chili powders, cumin, etc). But this recipe simplifies the process further by using only 1 seasoning: Herbs De Provence. It’s a blend of Italian herbs, including lavender, which adds a subtle floral note. Here’s how it’s done:

Simple Provence Roasted Sweet Potatoes

Servings: 0

Ingredients

  • 2-3 sweet potatoes
  • 1 Tbsp olive oil
  • 3 Tbsp herbs de Provence
  • Salt and pepper to taste

Instructions

  • Pre-heat oven to 425 F.
  • Cut sweet potatoes into 1” cubes. Toss w/ 1T olive oil, 3T herbs de Provence, S&P.
  • Place sweet potatoes on an oiled sheet tray, roast for 35-40min, remove from oven and toss halfway through cooking.

The sweet potatoes can be prepped in advance (chopped & seasoned) and then roasted on the night of your meal. In my January Plan, I pair this with a sundried tomato, goat cheese & spinach stuffed chicken breast.
