Grilled Rosemary Pork Chops & Grilled Nectarines

Rosemary pork chops are even better on the grill! With only 6 ingredients (including olive oil & salt!), this comes together so quickly but tastes really special.

Grilling burgers is always a crowdpleaser, but sometimes I just want a little something different. Sometimes I want something that feels a little special.

These grilled rosemary pork chops are super simple, but don't be deceived, they have a ton of flavor! Grilled meats really don't need anything fancy, they get so much flavor just from the grill.

Accompanied by grilled nectarines, this truly feels like a special meal. It's perfect for Father's Day or even 4th of July if you're looking ahead. Any time you want to cook something special, but don't want to heat up the house, grilled rosemary pork chops are an excellent choice!

Grilled Rosemary Pork Chops with Grilled Nectarines

Ingredients

For the Rosemary Pork Chops:

  • 1 small bunch rosemary
  • 3/4 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 1/4 # boneless pork loin chops
  • olive oil

For the Grilled Nectarines:

  • 1 small bunch rosemary
  • 4 nectarines
  • 2 Tbsp coconut oil
  • 2 Tbsp honey

Instructions

For the Pork Chops:

  • Heat grill to med-high heat.
  • Finely chop 1 small bunch rosemary for ~1 1⁄2 Tbsp.
  • For pork chop seasoning, mix together 1 1/2 Tbsp chopped rosemary, 3/4 tsp salt, 1/2 tsp garlic powder and 1/4 tsp black pepper.
  • Brush pork chops w/ olive oil and coat each w/ rosemary seasoning.
  • Cook pork chops ~5mins per side or until cooked through.

For the Grilled Nectarines:

  • Heat grill to med-high heat.
  • Finely chop 1 small bunch rosemary for ~1 tsp.
  • Cut nectarines in half & remove pit.
  • Cook nectarines cut side down ~2-3mins.
  • In a small pot add 2 Tbsp coconut oil, 2 Tbsp honey and 1 tsp chopped rosemary.
  • Melt mixture and stir until well combined.
  • Brush nectarines w/ coconut-rosemary sauce.

Can I make these rosemary pork chops without a grill?

Of course! You can use the same simple seasoning and cook in the oven but I personally really recommend learning how to grill if you don't already know how!

A basic grill is super inexpensive and, while it can seem intimidating, it's actually pretty simple to use.

How can I meal prep these pork chops?

This recipe is simple enough to throw together at dinner time but I know even simple recipes can be too much when the kids are getting hangry! To prep ahead, wash, dry and chop the rosemary and store. Measure the spices and combine with the chopped rosemary so the spice blend is ready to go.

You can also wash the nectarines ahead of time. I actually recommend washing all of your produce right when you bring it home so it's ready to go for cooking or healthy snacking! Convenience is such a huge factor in what we wind up eating, so make it easy for yourself (and your family!) to choose healthy options.

What are the nutritional benefits of this recipe?

These grilled pork chops are so much healthier than many classic grilling recipes! Here are the key facts:

  • Pork: Pork provides substantial amounts of Thiamine, Selenium, Zinc, Vitamin B12, Vitamin B6, Iron, and of course protein.
  • Rosemary: Did you know that even just smelling rosemary can give you a brain boost? Inhaling the scent can improve memory, focus and mood. Rosemary is also full of antioxidants! (Note: Many studies on rosemary focus on the extract or essential oils so more research is needed to understand the positive impact of adding rosemary to your diet.)
  • Nectarines: Good for your skin, eyes and immune system, nectarines are full of beneficial vitamins and nutrients. In addition, they're good for your bone health, containing calcium, Vitamin K, phosphorus and folate.

Is this a Keto pork recipe?

Yep! These grilled rosemary pork chops are Keto-friendly as-is. 

For the grilled nectarines, you can either have a small serving or serve the pork with some low carb fresh berries instead.

What should I serve with these grilled pork chops?

In my book, there's nothing better than grilled fruit! If you can't find ripe nectarines, here are some other fruits that are super tasty grilled.

If you want to stick to the grill, grilled zucchini or grilled eggplant, tomato & mozzarella stacks with pesto are both delicious, summery sides.

Gluten free corn muffins, Paleo mashed potatoes, or a simple summer salad would also work really well with these rosemary pork chops.
