How to Grill Zucchini

Do you know how to grill zucchini? It's super simple and totally worth the effort! Grilled veggies are delicious and don't heat up the house!

Summer nights sizzle with hamburgers, hot dogs, and steaks, but there’s no reason to reserve the grill just for meats. Adding fresh vegetables to the grill (and even fruits) creates a delicious flavor for a new take on fresh, summer produce.

Once you learn the basics of how to grill zucchini, get creative with grilling different fruits and veggies. Try grilled pineapple with pork or grilled bell peppers with chicken. Using the grill lets you be creative with spices and combinations. You can have the flavors of the summer grill and get your servings of vegetables! Throw some produce on the grill at your next gluten-free barbecue but don't blame us (or do) when there aren't any leftovers.

Bonus Tip: Don’t waste any of the zucchini. Save the unused ends to add to a smoothie.

Grilled Zucchini

Ingredients

  • 2 zucchini
  • Olive oil
  • Favorite spices

Instructions

  • Thinly slice zucchini lengthwise so they are about ½ inch thick. This works best using a mandolin.
  • Lightly spray or brush zucchini with oil and season with salt and pepper. You can try other spices too – I like mine with red pepper flakes!
  • Grill for 4 – 6 minutes.

Zucchini is a super versatile veggie. It also makes an excellent low carb side!

Rich in many vitamins, zucchini is especially high in vitamin A, which supports vision and immune function. In addition, the zucchini skin is high in antioxidants. Zucchini also provides manganese, vitamin C, potassium, magnesium, vitamin K and folate.
