This healthy baked eggs recipe is unique and delicious! The eggs are baked in acorn squash for a fun, nutritious breakfast. 3 ingredients!

While recipe testing for the October Week 2 meal plans, I made sure to throw a few extra acorn squash halves into the oven so I could enjoy this protein-rich breakfast the next day!

So easy, so much fun, and so tasty!

Big bonus: everything bakes together at the same temperature. No extra pans or dishes to clean!

Eggs Baked in Acorn Squash with Bacon

Servings: 2

Ingredients

  • 2 acorn squash halves, baked
  • 2 eggs
  • 6 strips of bacon

Instructions

  • Preheat oven to 400 F.
  • Crack one egg into a baked acorn squash half. Repeat for other squash half. Bake for 30-35 minutes.
  • Bacon: Place on a sheet pan in a single layer. Bake for 18-22 minutes depending on level of preferred doneness.
