Let's face it, not all gluten free muffins are created equal. Some leave something to be desired when it comes to texture. Some require too many specialty ingredients. And some, while being gluten free, aren't exactly healthy muffins when you consider all of the processed sugar in the recipe.
I've done quite a lot of experimenting over the years with creating healthy gluten free muffins that actually taste amazing and I'm confident in saying these are some of the best gluten free muffin recipes you'll find. They all feature healthy, whole-food ingredients and they all pass the kid-test.

How to Freeze Muffins
As I mentioned above, I love including muffins in my freezer meal prep. (I have a short video all about freezer meal prep here!) While I'll sometimes make a whole batch to stock the freezer if my stash is running low, I more often simply freeze a few muffins whenever I make a batch.
Freezing muffins is easy but there are a few things to keep in mind to ensure the best texture and prevent freezer burn.
First, let your muffins cool to room temperature before freezing. (This is true of all freezer meal prep – never stick something hot in the freezer!)
Second, flash freeze your muffins. This simply means you should freeze them in a single layer on a plate or sheet pan before transferring to a container or freezer bag. This will help your muffins not stick together once frozen, so it's easy to pull one out.
When you're ready to enjoy, simply defrost the muffins in the fridge for 24-48 hours or heat up briefly in the oven. That's all there is to it!
