Let's face it, not all gluten free muffins are created equal. Some leave something to be desired when it comes to texture. Some require too many specialty ingredients. And some, while being gluten free, aren't exactly healthy muffins when you consider all of the processed sugar in the recipe.

I've done quite a lot of experimenting over the years with creating healthy gluten free muffins that actually taste amazing and I'm confident in saying these are some of the best gluten free muffin recipes you'll find. They all feature healthy, whole-food ingredients and they all pass the kid-test.

I love keeping a variety of muffins on hand to serve with breakfast or for an afternoon snack. If you've followed me for long, you know I love batching and freezer meal prep to supplement my weekly meal plans. Muffins are perfect to freeze and taking advantage of the freezer means you'll always have a few different types of muffins to pull out when groceries are running low.

How to Freeze Muffins

As I mentioned above, I love including muffins in my freezer meal prep. (I have a short video all about freezer meal prep here!) While I'll sometimes make a whole batch to stock the freezer if my stash is running low, I more often simply freeze a few muffins whenever I make a batch.

Freezing muffins is easy but there are a few things to keep in mind to ensure the best texture and prevent freezer burn.

First, let your muffins cool to room temperature before freezing. (This is true of all freezer meal prep – never stick something hot in the freezer!)

Second, flash freeze your muffins. This simply means you should freeze them in a single layer on a plate or sheet pan before transferring to a container or freezer bag. This will help your muffins not stick together once frozen, so it's easy to pull one out.

When you're ready to enjoy, simply defrost the muffins in the fridge for 24-48 hours or heat up briefly in the oven. That's all there is to it!

These are particularly tasty with a mug of tea in the afternoon!

Lumberjack Muffins

While these aren't traditional muffins, lumberjack muffins offer all of the ease and portability of a muffin. Made with sausage, eggs and veggies, these are perfect for when you're in the mood for a savory breakfast rather than sweet. Just like my other muffin recipes, these freeze quite well. Don't skip the smoked paprika, it adds to much flavor!

These chai spiced zucchini muffins were an easy choice for inclusion on this list. They've been a hit ever since they hit our weekly meal plans! These muffins use a mix of almond flour and coconut flour in addition to zucchini, apple sauce, almond butter, maple syrup and plenty of warming spices. If you love the flavors of chai tea, these are a must!

Very Berry Muffins

I love these muffins with a mix of raspberries and blueberries but the recipe is flexible. You can absolutely make them simple gluten free blueberry muffins if you prefer. These very berry muffins include 1/2 cup of almond butter and a whole cup of ground flax so they're practically bursting with healthy fats and omega-3s. This is definitely a healthy muffin recipe you can feel good about!

Both almond flour and coconut flour work quite well for gluten free muffins. Make sure not to use them interchangeably though. Recipes with coconut flour require quite a bit of moisture, usually from eggs. I frequently use a mix of almond flour and coconut flour, which results in an excellent gluten free muffin texture.

Do you need xanthum gum in gluten free muffins?

Nope! While some gluten free muffins requite xanthum gum, none of mine do and, I promise you, they're totally delicious. I'm a huge fan of keeping recipes simple without requiring you to purchase a bunch of specialty ingredients that will likely linger in your pantry for years.

How do you make gluten free baking taste better?

To make your gluten free baking taste better, choose a high quality recipe and stick to it. While I love experimenting in the kitchen, baking can be tricky, even more so with gluten free baking. Especially if you're fairly new to gluten free baking, I recommend sticking to the recipe.
