2021 Subscriber Favorites – 10 Everyday Healthy Recipes

These 10 everyday healthy recipes were Prep Dish subscribers' favorites in 2021. They're simple, meal prep friendly & delicious!

This is one of my favorite posts to write each year. I just love seeing which recipes have become favorites with our Prep Dish subscribers! It makes me so happy to imagine these dishes becoming a part of a family's regular rotation and food memories.

We have an eclectic mix this year, including a breakfast and a healthy fruit-based dessert, but the majority of the recipes are simple dinner recipes. This doesn't surprise me. Whenever we ask for feedback (which is pretty often!) we hear that healthy, easy dinner recipes are what people want.

1. Sweet Potato Breakfast Bowls

Sweet Potato Breakfast Bowls

If you're looking to mix up your breakfast rotation, this is such a fun recipe to try!

First of all, it's totally customizable. Shredded coconut, granola, mini chocolate chips or cacao nibs – the topping options are endless!

Secondly, this breakfast is Paleo and totally Whole30-friendly (just omit the maple syrup). It's healthy and vitamin-packed.

Sweet potato breakfast bowls are also perfect for a “build-your-own” type situation. Whether you're laying out a breakfast spread for guests or have kiddos who love to help assemble their own meals, you can easily set out the sweet potato base and a variety of toppings to let everyone customize their meal.

2. Beef Barbacoa

This beef barbacoa is always a hit and it's super versatile too.

You'll find both slow cooker and Instant Pot instructions in the post so use whichever method you prefer.

Serve the beef in lettuce wraps, tacos, or in bowl form over cauli rice or actual rice. You can't go wrong!

This is a really good one to double up on and eat in different ways throughout the week.

3. Eggplant Tomato Mozzarella Stacks

These elegant little stacks make a beautiful appetizer alongside some simple chicken or fish, or serve them as a vegetarian main with a green salad.

If you don't like eggplant, you could sub zucchini here, though I recommend you give the eggplant a try!

While you don't have to use homemade pesto, it definitely adds a certain freshness to the dish. Pesto freezes quite well, so consider making a double batch so you can whip this up on a weeknight.

4. Moussaka

We included moussaka on our meal plans based on a subscriber's request (we love feedback!) Well, I'm glad we did because this one was an instant hit with everyone who tried it.

A classic Greek dish, moussaka has all the qualities of a beloved comfort food dish but the spices make it different enough to be an exciting addition to your weekly dinner menu.

Like most casserole-type dishes, this would also work well for a freezer meal! Make a double batch, freeze one and pull it out on a busy week.

5. Beef Stew

You can't go wrong with a classic beef stew so I wasn't surprised to see that this was a subscriber favorite this year!

As with all of our recipes, this one is perfect for meal prep so you can arrive home from a busy winter's day at work with a cozy, comforting stew waiting for you.

6. Maple Mustard Pork Tenderloin

When you're talking about everyday healthy recipes, a simple 3-ingredient recipe like this maple mustard pork certainly qualifies! This marinade is just as good on chicken or salmon too.

In this post, you'll also find a really simple side, herbed corn and kale, that relies entirely on pantry and freezer ingredients.

7. Steak Kabobs

If you love to grill but want to branch out from typical burgers, kabobs are a great place to start!

These steak kabobs are easy to throw together and, of course, are totally “preppable.” If you want even more kabob inspiration, my grilled curry chicken skewers are also quite tasty.

8. Basil Aioli Chicken Salad

This basil aioli was another one that became an instant favorite with so many people!

My herby aioli works well as a dip, spread or marinade. It adds a ton of flavor with just a few ingredients, which is hard to beat!

In particular, the basil aioli chicken salad was a big hit, but you'll find tips for all kinds of ways to enjoy this aioli within this post.

9. Chicken Lo Mein

Easy Chicken Lo Mein

The 5-ingredient sauce in this recipe is the perfect mix of sweet and savory. This dish is like an upgraded version of the takeout favorite, but so much healthier.

When you make the sauce ahead of time and chop the veggies and chicken ahead of time, this comes together quickly enough to be a weekday favorite.

If you're gluten free (like I am!) make sure to check out my tips for gluten free noodles to substitute for traditional lo mein noodles.

10. Banana “Nice” Cream

I was happy to see that a dessert made it into the favorites list, and this is a good one!

With only 5 ingredients, it's sweetened entirely by fruit and the toppings and variations are endless!

The best part? You don't even need an ice cream maker for this one, just a blender to mix everything together.
