It's that time again! I always love seeing which recipes were your favorites. This year's roundup has a few themes but also plenty of variety!
One theme is easy weeknight meals, which doesn't surprise me. Those featured heavily in my house last year as well! Sheet pan dinners, quesadillas and pasta dishes found their way onto the 2022 favorites list. A few “fancier” dishes like moussaka and pecan-crusted chicken also made the list though. It's a great balance of super easy meal prep dinner recipes and elevated dishes you'll remember for months to come.
Whether you're brand new to meal prep or a meal prep veteran, I hope you find a new favorite on this list!

1. Greek Sheet Pan Chicken
This fun take on a sheet pan dinner includes red onion, kalamata olives, zesty lemon and artichoke hearts for a supremely flavorful, yet quick and easy, dinner. Everything cooks together on a sheet pan for 35 minutes.
I love serving this with angel hair pasta but it would also be delicious on zoodles, over quinoa or atop a simple green salad.
2. Harvest Cobb Salad
With apples, blue cheese, pecans and hard-boiled egg this hearty salad has a lot going on. But the best part is the festive seasonal dressing! This apple cider vinaigrette is perfect for fall. It has just a touch of sweetness from honey and plenty of acid to offset it from the apple cider vinegar and dijon mustard.
This salad is perfect as-is but would also be lovely topped with grilled chicken or crumbled bacon!
3. Tuscan Chicken Skillet
This skillet dinner was a serious hit with our Prep Dish subscribers!
With garlic, shallots, sundried tomatoes and spinach, it's certainly not a boring chicken dish. The creaminess comes from heavy cream but if you need to make this dairy free, that's not a problem. The recipe includes tips on substituting cashew cream.
You can serve this over orzo, cauli rice, quinoa, etc. All variations are delicious!
4. Chicken Enchilada Bowl
As a Texas girl, I love enchiladas. But let's face it, they do take a bit of time to put together.
When you're craving that savory, slightly spicy enchilada flavor but don't have time to roll all of those tortillas, my Chicken Enchilada Bowl is the perfect solution!
You may also find this version to be more kid-friendly, as you can easily serve the components separately on their plates, providing the homemade enchilada sauce for dipping.
5. Turkey Zucchini Lasagna
Lasagna is one of my favorite foods and is quite popular on our meal plans as well!
While lasagna does take a bit of time to make, I always make at least two lasagnas at a time to make it worth the effort. It takes barely more time than making one and I stick one in my freezer for an easy meal on a busy night. Definite win!
6. Beef & Bean Burritos
This easy family favorite has just 7 ingredients and comes together so quickly.
Hearty, savory and a definite crowd-pleaser, this is a recipe you'll find yourself reaching for again and again. Especially if you prep the filling ahead of time, these are perfect for busy weeknights!
7. Vegetarian Quesadillas
These corn and black bean quesadillas are another example of an incredibly easy, but still delicious weeknight meal that made the 2022 favorites list. Diced chiles and green onions elevate the flavor from a basic cheese quesadilla while black beans up the protein content.
This is also a perfect “clean-out-the-fridge” recipe! Roasted sweet potatoes leftover in the fridge? Throw them in! Some spinach that needs to be used up? Saute it briefly and add it to the filling.
8. Salmon Teriyaki Bowls
Salmon Teriyaki Bowls are an old Prep Dish recipe but a frequent favorite. The homemade teriyaki sauce is lightly sweet but also fresh tasting from the garlic and ginger – so much better than the bottled variety!
9. Chicken Salad Wraps
If you're looking for a lighter dinner or a packed lunch you'll actually look forward to, I highly recommend these chicken salad wraps. You'll mix seasoned shredded chicken with diced red onion, avocado mayo, crumbled bacon, salt and pepper. The recipe calls for baked chicken breast but you could also sub rotisserie chicken or leftover chicken to make this extra easy!
10. Mediterranean Lamb Burgers
I know lamb can be intimidating but I'm hoping seeing these burgers make the favorites list will give you a nudge to try it if you haven't already! Topped with sliced avocado, goat cheese and red onion, these burgers are a fun way to mix it up next time the burger craving strikes.
11. Sheet Pan Steak & Veggies

Whether you make it with gluten free pasta or zoodles, this BLT Pasta Salad is packed with both veggies and flavor. The homemade creamy basil dressing takes it over the top!
13. Parmesan Chicken Burgers
You'll find this fan-favorite recipe in my article, The Secret to Juicy Turkey Burgers. All of the recipes in that post are delicious with either ground turkey or ground chicken. In this particular iteration, you'll mix grated parmesan, parsley, avocado mayo and spices with the ground chicken or turkey for a truly juicy burger.
14. Red Snapper in Crazy Water
This recipe was an instant hit and it's easy to see why! Fun, inventive and simple, it results in incredibly tasty and tender fish. If you can't find red snapper, feel free to sub a different white fish like tilapia.
15. Buffalo Chicken Stuffed Sweet Potatoes
One of my favorite tricks for elevating a simple meal into something craveable is a good homemade sauce. Well, this recipe has two! Homemade ranch and homemade buffalo sauce come together here for a healthy dinner you'll want to eat again and again.
16. Black Bean Quinoa Burgers
I love making these hearty veggie burgers when I have vegetarian guests or when I just feel like changing it up! My goal here was to create a plant-based burger that can actually stand up to the grill and these fit the bill.
17. Bison Meatloaf
A homemade tomato sauce lightly sweetened with pure maple syrup replaces the ketchup in this updated version of the classic comfort food. I love using ground bison for the protein but you could certainly sub ground beef if you prefer.
This is one of those meal prep dinner recipes you'll feel so good about whipping up on a Wednesday when time is short but you need a delicious meal to bring everyone to the table.
18. Pecan Crusted Chicken
Chicken strips are not just for kids! In this version, the chicken marinates in a mix of coconut milk and apple cider vinegar before being dredged in egg and spiced pecans. These are so crispy and full of flavor, no one will miss the drive-thru version!
19. Slow Cooker Lasagna Soup
Lasagna is a big-time favorite in my house. I love having this version when I don't have time to make an actual lasagna! It has all of the flavor we love but is so easy to throw together. Apart from some optional ricotta for topping, it's also dairy free!
20. Cherry Balsamic Pork Tenderloin
How pretty is this dish? I love the combination of cherries with pork and this recipe is no exception. You'll start by making a marinade by blending cherries, tamari, balsamic, maple syrup, salt and garlic. After marinating for 1-24 hours, you'll sprinkle the pork with thyme and bake it alongside more cherries.
This is the kind of dish I love serving to company. I can prep the marinade ahead and it feels really special while requiring very little effort.
21. Beef & Vegetable Stew
Another slow cooker dish made the favorites list! I can see you guys love the slow cooker as much as I do 🙂
The red wine is optional in this recipe but, if you drink wine, I highly recommend including it. It adds a little depth of flavor that takes this one over the top.
22. Moussaka
This Greek-inspired dish came straight from a subscriber request and was an instant hit! Roasted eggplant is layered with a spiced ground beef mixture. Then everything is topped with cashew cream for a dairy free take on this beloved dish.
