Fitting greens into breakfast always feels like a bit of a win. There's no better way to start the day than with a plate full of protein and veggies.
If your child is headed to a cookie-packed school party or you're heading into an office full of treats, all the more reason to load up on the good stuff early!
Plus, you know, it's green.
Green Shakshuka
This green version of the Middle Eastern classic is the perfect St. Patrick's Day breakfast! On a day when you may have some extra treats, it feels good to start with something healthy and this recipe is packed with greens and protein!

By the way, if you don't have a great blender, it's totally worth investing in one. I've found that less powerful blenders really don't do a good job of blending up greens. As a result, they make green smoothies full of tiny leaves instead of fully blended and smooth. In contrast, with a quality blender the only sign of the added greens will be the beautiful vibrant color!

Salmon makes a delicious vehicle for the dairy-free pesto, but don't feel limited! It's equally delicious on chicken or spaghetti squash, or even gluten free pasta.
Moreover, this cilantro pesto has only 5 ingredients and requires no cooking – now that's something to celebrate!
