Heart shaped plates for Valentine's Day? An otherwise normal breakfast is suddenly special.
Green food on St. Patrick's Day? It's a party!
So today I'm sharing a roundup of some of my favorite green recipes for a fun and delicious St. Patrick's Day.
St. Patrick's Day Breakfast
Fitting greens into breakfast always feels like a bit of a win. There's no better way to start the day than with a plate full of protein and veggies.
If your child is headed to a cookie-packed school party or you're heading into an office full of treats, all the more reason to load up on the good stuff early!
Plus, you know, it's green.
This green version of the Middle Eastern classic is the perfect St. Patrick's Day breakfast! On a day when you may have some extra treats, it feels good to start with something healthy and this recipe is packed with greens and protein!
Green shakshuka is Gluten Free, Paleo friendly (just omit the cheese!), and Keto.
With only 2 ingredients (plus salt & pepper!) this festive breakfast recipe couldn't get any simpler. It's also full of healthy fats and protein making it the perfect healthy holiday recipe to start the day.
With a breakfast this green, you'll be feeling the luck o' the Irish all day long. This makes a perfect snack too, perhaps an after school snack for your kids? After all, green smoothies are probably the best way to encourage kids to consume greens if they're not sold on salad yet.
I've got one more green smoothie recipe for you! This one's got only 3 ingredients for a quick and healthy Saint Patrick's Day recipe to start the day.
By the way, if you don't have a great blender, it's totally worth investing in one. I've found that less powerful blenders really don't do a good job of blending up greens. As a result, they make green smoothies full of tiny leaves instead of fully blended and smooth. In contrast, with a quality blender the only sign of the added greens will be the beautiful vibrant color!
Saint Patrick's Day Recipes for Lunch
When you're a kid even minor holidays are exciting. You get to enjoy school parties, treats and special family traditions.
As an adult though, it's easy to let these days pass us by without much fanfare due to all of the daily life stuff that never seems to stop. I say let's celebrate though!
It doesn't have to be anything fancy, or even decadent. Starting little traditions, like eating a green picnic lunch as a family, can make these little days meaningful.
Hopefully one of these healthy Saint Patrick's Day recipes will make it into your holiday lunch traditions!
There's no better day to eat the rainbow! This salad is specifically designed for prepping ahead so it's perfect to bring with you to work or keep stored in the fridge for a quick lunch. The lemon-balsamic vinaigrette has so much flavor, definitely consider making a double batch for salads throughout the week!
Massaged kale salad is another one that's great for meal prep because unlike most pre-prepped salads, it only tastes better with time.
Make this one for a healthy Saint Patrick's Day recipe, or any time you're feeling the need for a little extra green.
Collard wraps certainly make a vibrant green lunch for St. Patty's Day! In addition, you can totally prep them ahead of time for an easy lunch to enjoy all week long.
Not to mention, if you're ever going to sell your kids on wrapping their chicken fingers in greens, Saint Patrick's Day is the time to try it! Just tell them it's good luck 😉
Saint Patrick's Day Dinner
Making mid-week holidays feel festive and fun can be a bit tricky. You may not have time for an elaborate Irish feast, but that doesn't mean you can't give a little nod to the holiday.
Both of these dinner recipes are super fast, perfect for a Tuesday, and both make healthy holiday recipes that won't leave you feeling weighed down.
These both happen to be seafood as well – definitely a go-to for me for a quick meal! If you don't love your local grocery store's seafood counter, check out Vital Choice. They offer the convenience of delivering seafood right to your door and, most importantly, you can trust that it's great quality and sustainably sourced! Definitely a bonus if, like me, you live nowhere near the coast.
Okay, so this one isn't totally green but I think the lime and cilantro add enough festive flare, especially if you serve it with zoodles. Most importantly, it's light but flavorful and totally delicious, making it the perfect healthy holiday recipe.
Salmon makes a delicious vehicle for the dairy-free pesto, but don't feel limited! It's equally delicious on chicken or spaghetti squash, or even gluten free pasta.
Moreover, this cilantro pesto has only 5 ingredients and requires no cooking – now that's something to celebrate!
