If your mornings feel rushed, you NEED these healthy freezer breakfasts. You'll always have something on-hand during busy weeks.

What are your mornings like?

Do you have time to sit down to a healthy, satisfying breakfast or are the mornings often too chaotic to fit in a good breakfast?

Trust me, with two little kids and a business to run, I know the mornings can be crazy! Still, I'm a huge believer in breakfast. And I don't just mean from a nutritional perspective. The morning routine sets the tone for the whole day and taking even just 5 minutes to sit down and enjoy breakfast with your family can make a huge difference in your day.

Feel like you don't have time? Freezer breakfasts make all the difference! With a well-stocked freezer, you won't have to waste any time in the morning cooking breakfast. All you'll have to do is reheat and enjoy!

And don't worry, if your mornings are too busy to sit down to breakfast even if it's made ahead, many of these work well for make-ahead breakfasts to go too.

How to Freeze Muffins

I've included a couple of gluten free muffin recipes below. These freeze really well but there are a couple of things to keep in mind to make sure your muffins taste fresh and delicious when you're ready to enjoy! Here are my tips on how to freeze muffins:

  • Cool Completely – Before freezing your muffins, let them come to room temperature.
  • Flash Freeze! To prevent your muffins from sticking together and getting freezer burn, flash freeze them before placing in a freezer container or bag. To flash freeze, place muffins in a single layer on a parchment-lined baking sheet and freeze for a few hours. Then transfer to a freezer container.
  • Enjoy within 3 Months – For maximum freshness, enjoy the muffins within three months.

These tips work well for any small item, like mini frittatas or breakfast cookies, in addition to muffins.

Without further ado, here are 10 make-ahead breakfast recipes to stock your freezer!

Freezer Breakfast Burrito Recipe

1. Freezer Breakfast Burritos

We developed this recipe for our first freezer challenge and it was an immediate hit! My own family went through these so quickly, I definitely recommend a double or triple batch.

Super customizable, you can mix up the filling based on what your family likes best or what you have on-hand. My favorite part about these burritos though? They work just as well for a meal prep lunch as a breakfast!

High Protein Energy Balls

2. High Protein Energy Bites

Energy bites freeze so well! I love making a big batch, flash freezing and then storing in a freezer container to pop out whenever I want one. These energy bites have plenty of protein from the almond butter and almond flour. They work just as well as a breakfast, snack or simple dessert for a packed lunch.

If you don't want chocolate chips in your breakfast, feel free to sub dried fruit or cacao nibs!

One of the best things about freezing energy bites is they thaw very quickly so there's no need to plan ahead!

Batch Cooking Meal Prep Frittata Muffins

3. Lumberjack Muffins (AKA Mini Frittatas)

These delightful little egg muffins are the perfect make ahead breakfast to go. Packed with protein and veggies, they come together quickly and reheat nicely.

For the very best results, thaw for 24 hours in the fridge and reheat in the oven at 350 F for 15-20 minutes. If you don't have time for that though, simply take a frozen lumberjack muffin out of the freezer and microwave for 60-90 seconds or until heated through.

Mango Blackberry Smoothie

4. Smoothie Bags

While I don't really recommend making a smoothie entirely ahead, you can assemble smoothie bags that make smoothies incredibly quick and easy, even on a weekday morning.

All you have to do is add your ingredients, minus the liquid, to a freezer bag or container and seal tightly. When you're ready to make your smoothie, add whatever liquid you like (almond milk, coconut water or even plain water!) to a blender, followed by your smoothie bag contents and blend.

Add nut butter and dates with the liquid, rather than including them in the smoothie bag, especially if you don't have a high-powered blender.

Gluten Free Berry Muffins

5. Very Berry Muffins

You can use whatever berries you like here but the muffins are quite tasty with a mix of blueberries and raspberries, as written in the recipe.

These muffins pack in so much protein and healthy fats with the eggs, almond butter, flax and coconut oil, for a super satisfying breakfast. They're paleo, as well as gluten free.

Grain Free Granola Recipe

6. Paleo Granola

This paleo granola is super popular with our subscribers, and for good reason!

If you'd like to make a non-paleo, but still gluten free, version, here's how: increase to 1/2 cup honey and 1/2 cup coconut oil. Add 4 cups gluten free oats to the other ingredients.

You can enjoy the granola over Greek yogurt, in almond milk or simply by the delicious handful!

7. Peanut Butter Breakfast Cookies

Make your kiddos' (or your inner child's) day by telling them you're serving cookies for breakfast!

Sweetened with dates, these breakfast cookies have plenty of protein from the peanut butter and egg, but taste like a true treat. Feel free to sub almond butter to make these paleo-friendly.

Flash freeze, just like muffins, before adding to a freezer container.

Gluten Free Banana Muffins

8. Gluten Free Banana Muffins

If you haven't tried baking with coconut flour, this is a great introductory recipe. Coconut flour is budget-friendly and gives a great texture to gluten free and paleo baked goods. These muffins are sweetened entirely with bananas for a quite healthy breakfast!

Moroccan Breakfast Hash

9. Moroccan Breakfast Hash

If you prefer savory freezer breakfasts, this is a good one! Plus, breakfast hash is a wonderful way to get plenty of protein and veggies in at breakfast time.

You have two options for freezing this one. First, cook the entire hash, minus the egg of course, cool and freeze. Second, chop the veggies and store them together in a freezer bag. Freeze the ground meat separately. When you're ready to enjoy, thaw in the fridge for 24 hours before following the recipe as written.

Gluten Free Blueberry Scones

10. Gluten Free Blueberry Scones

Gluten free and paleo, these scones taste every bit as good as traditional scones! Lemon zest and freshly grated ginger give them so much flavor.

Flash freeze before adding to a freezer container for best results.
